These beautiful peppers were hand delivered to me by a good friend that is a wildland firefighter on a trip home.
Fresh from southern Colorado to me!
So coming shall be a hatch and green tomatoe Verde (he named it but I forgot)
Here is a simple photo so you can dream of green chillies in and on everything!
**Hatch chiles range from 900 to over 12,000 Scoville Heat Units (SHU). Because "Hatch chile" is a regional name for peppers grown in the Hatch Valley of New Mexico rather than a single variety, the heat level depends heavily on the specific cultivar.

This is exactly why i experiment with my flavor and sauces.
Someone asked if I had a green sauce..
My answer was no and they all taste the same to me. ......same to me i thought...
After I said it. Then I responded with I will experiment with a new spin on traditional chili Verde...
Few days later it dawned on me.. Green sungold tomatoes. Plant was absolutely loaded with green tomatoes.
Few garden peppers and few green tomatoes with fresh Dutch purple shallots.
Tossed them up for a quick 2 week fermentation and blended it up...
First taste I was absolutely blown away with the flavor profile. Bright fresh flavors I have yet to experience in a Verde sauce.
I have stumbled on a masterpiece of culinary wonder! Do not be afraid of culinary adventure! You might just discover the thing you seek.
