When going through a transformation, I tend to keep to myself and become quiet. I am learning that expressing myself is part of the journey and truly is a superpower that we all have. 💪⁠

You know all this time I thought I was growing, and I was, but never like this…

I was reflecting on a decision this morning and brought up a lot of tense heavy energy spot in my body.

Ya…my old self would never commit to something like this.

Shadow work, I believe it’s called.

Sitting here at my desk, feeling this heaviness and excitement at the same time I think what true expansion and growth feels like.

And after years of developing this person and business woman I want to be,

While constantly being asked when I will return to the restaurant industry,

I believe I have fully embodied her.

Because after making the decision and committing, EVEN before making my next quarter goals...

I truly feel at peace, calm, and open to what comes next.

This whole month, I have been worrying about being in-alignment or not, if I’m at the place, doing the right thing.

My mind is clear and my heart is joyful.

I am Extraordinary. 💪🔥

And I don’t have the responsibility to prove it to anyone.

Why doesn’t the Weight loss Industry Highlight Self-Care or Self-Love?

You know, I have been asking that question myself lately.

Leaving out how we Treat ourselves on a Day-to-day Basis HUGELY impacts us and our Success.
Especially when it comes to Achieving our Wellness Goals. 💪

Imagine a hard driven woman, who is an Executive Marketing Director, loves the fact that she is curvy woman and owns her curves every day, goes into the doctor’s office for a routine yearly physical.

She is feeling fine about stepping on the scale, knowing that she has been working on eating healthier and providing her body with a little movement every day. 👍

She steps on the scale, doesn’t look down because she is confident that her weight hasn’t fluctuated too much. When the nurse says her weight out loud…Her stomach drops….”What?!!!! Since when?!”

The nurse looks at her like she crazy because how could she have not known?

So she heads home after the appointment and goes through her fridge and pantry…
Throwing away all the food that is “unhealthy”.
She goes to her calendar and schedules in workouts for every day.
Decides to go on a juice cleanse and forbids herself from all sweets. 😭

This situation is what I like to call…Scale Panic.
You make decisions, changes, promises, while in panic and in a high stress mode.

If she chose to respond, instead of react,
She would have made decisions, and commitments from a place of awareness and compassion.
A much better, peaceful, and relaxing place to be. 💜

Don’t you DESERVE to be Gentle, Compassionate, and Patient with your choices?
I believe that you do.

I CHALLENGE YOU!
Before you harshly Judge yourself for eating ice cream or popcorn loaded with butter, and before you call yourself a fat cow,
I invite you to release the Judgment on yourself and approach the situation with Compassion.

Love and Care is what you Deserve my Dear. 💚

As we all know, Nutrition is important when we are wanting to Experience Weight Loss, Feeling Healthy and Vibrant, and overall achieve Well-Being. ☀️

Now, I could lecture you what Nutrition is, but you already know!

What IS important, is how can you add Fuel to your body with Delicious, Energy Amplifying, Real Food to what you’re already doing?

I Commend and Celebrate you on where your Nutrition is now! 🥳

⭐️You’ve already have been working on adding a few vegetables here and there.
⭐️You’ve been working on hydrating more and possibly know that you can EAT your water.
⭐️You have been Tweaking your current habits to help you reach your goals.

Now, think back to a year ago now…

What were you feeling?
What did you eat when you were feeling stressed, anxious, and depressed?

I know my go-to was Flammin’ Hot Cheetos and Cookie Dough Fudge. 😂😂

Where you are now, the awareness that you have, the conscious decision you have made…

It is time to Celebrate your current situation, where you’re at now.

AMP up the Flava! 🔥🔥🔥

Yesterday, I made Low Carb Enchiladas rolled up in zucchini and served with a Spanish Chicken Sausage Cauliflower Rice.
Pretty damn Delicious.
Definitely worth the labor and time.

My favorite part of this recipe was the Enchilada sauce Chicken mixture.
I roasted chicken tenders in the oven for an added tenderness.
I also added a can of mild green chilis.
And for an extra depth of Flavor, I toasted the spices.

♦️♦️Chef Kari's Tip:
When a recipe calls for Spices, Toast them in the pan with your vegetables before adding chicken (in this case) or broth.
This will Amplify the oils in the Spices
AND Add another Depth of Flavor to your Cooking 🔥🔥

This chicken mixture is varietal and can be used for multiple different meals.
I am looking forward to using this chicken...
💜Top off my green salads
💜Melt with cheese for a quesadilla
💜Roll up with sauteed peppers and onions for a wrap
💜Mix with scrambled eggs for breakfast burritos!

Emergency Freezer Meal Alert!

An Emergency Freezer Meal is a meal that you can have on hand in times you are Crunched for time and Growing Hangry.

All Emergency Freeze Meals must be:

Delicious
Quick to Cook, 30 Minutes or less
5 Ingredients Maximum
Align with my Healthier Eating Goals

Here is the Recipe for Orange Chicken with Cauliflower Rice, Pineapple, and Bell Peppers.

For this meal, I am using:
(Makes 3-4 Servings)
1 bag Trader Joe’s Orange Chicken
½ 20 oz can or fresh Pineapple Chunks
1 10-12 oz bag Cauliflower rice
1 Garlic clove, minced
1 Bell Pepper, chopped in Medium Chunks

In Addition to the Instructions on the Orange Chicken:
💜Add the Pineapple and Peppers to the skillet at the same time you add the Chicken.
💜Prepare the Cauliflower Rice in a Separate Skillet heated on medium high.
💜Sauté Cauliflower in 1 Tablespoon of Oil for 4-5 minutes on medium heat.
💜Add 1 Garlic and season with Salt and Pepper.
💜Serve the Orange Chicken over the Cauliflower Rice and Enjoy.

If you have unsalted Peanuts or Cashews, that would be a great topping for an Added Crunch.
A good hearty healthy meal down. Nailed it!

Caramelized Onions are a Great to have on hand to Rev up any Sandwich or Breakfast Egg Routine. Anytime you are Craving a Smokey and Spicy Kick to your Food, these Chile Pepper Caramelized Onions will do the trick!

Recipe:

Peel and thinly Slice 2 medium Yellow Onions or 1 Lb.
Add 1 ½ Tablespoons of Olive Oil to a 10-inch Non-stick Pan.
Loosely separate the onions with your fingers or spoon.
Add 1 Teaspoon or Sprinkle of Salt.
Cook over Medium Heat for 15 minutes, stirring every few minutes.
Turn down the Heat to Medium Low and Cook for 10 minutes.

Next, Add:
¼ Teaspoon Chile Pepper Powder
(Add 1/4 Teaspoon for Extra Kick!)
½ Teaspoon Paprika
¼ Teaspoon Garlic Powder
1 Teaspoon Brown Sugar
½ Tablespoon of Salted Butter
Salt and Black Pepper as Preferred

Stir for 2 minutes until Combined and Spices Become Fragrant.

Here, I ate these Caramelized Onions on a Turkey and Bacon Burger. It Added a Tasty Kick to my Lunch!

I Know tomorrow, these Onions will be Scrambled into some Eggs! Nom!
