When I herb something, I herb it real hard.

Yes, herbs can be bitter, but they can also be bright, spicy, refreshing, pungent, vegetal, savory, sweet, and so much more. Herbs are packed with flavor, and the phytochemicals responsible for that flavor just so happen to also be what makes them medicinal, (and often what gives them their color!)

The therapeutic power of some herbs are wonderfully extracted with heat and water, while fresh eating is best for others. Parsley, dill, garlic and chives are examples of those with heat-sensitive compounds that are best eaten as fresh as possible. In fact, garlic scapes and chives are part of the allium family, which means much of their anti-microbial and cardiovascular supporting value is only created when the plant material is crushed and allowed to rest for 10+ minutes so a chemical reaction with oxygen can occur. After that, it’s best eaten fresh or very lightly cooked.

This tofu chickpea salad has the immune and heart-supporting medicine of both fresh rested alliums AND rested alliums infused into vinegar (fire cider!) - a double whammy!

Let’s make a skullcap tincture!

American Skullcap (Scutellaria lateriflora) is one of the herbs I recommend the most to people for anxiety, especially the kind that comes with that bodily tension, irritability and sleep trouble. The baicalin and scutellarin compounds in the plant modulate GABA receptors, promoting calmness and neuroprotection. As a parent of two straight up gremlins, it’s a wonderful nervine that soothes my frayed nerves!

My dream of a dedicated home apothecary has come to fruition! We finally have the perfect space in our new home for all our family’s plant medicine, and I couldn’t be more grateful.

Looking to organize your own apothecary space? Here’s how I thought about storage:

Finished Tinctures:
- Easily accessible, thin shelves in a dark cool place for dropper bottles of tinctures, glycerines, bitters, etc. This is your day-to-day store
- Less accessible bulk storage for larger jars of finished tinctures, to refill dropper bottles (also a dark cool place)

Dried Herbs:
- Ample shelves in a dark cool place, spaced just enough for quart jars, to allow alphabetical organization of labeled dried herbs. Multiple jars of the same herb are lined up backwards with the oldest in front (FIFO)
- Deep drawers to contain the more unruly large bulk herb bags

Finished Vinegars and Salves:
- Dedicate a place in a fridge for storing finished infused vinegars, oils, and salves. This will keep them potent and microbial growth-free for significantly longer!

In-Progress Medicine:
- Dedicate an easily accessible, dark cool space for jars of whatever you’re currently infusing. Make it easy enough to get to so there are no barrier to the daily-weekly shaking they need!

Bulk Menstruums
- these are all your solvents - vinegar, vodka, oil, honey, glycerine, distilled water, etc. dedicate a space for these so you can take advantage of bulk buying opportunities

Empties
- the jars never stop coming, so dedicate a space for empties. If necessary create a clear division between sanitized and unsanitized

Oodles of farm fresh tomatoes/basil and a Spanish World Cup victory can only mean one thing: Gazpacho! I whipped together this almost full blender of tomatoes with a slice of bread, half a cucumber, fresh basil, turmeric kraut (for some acidity, salt, and pre/probiotics), a clove of tested diced garlic, splash of honey, and S&P to taste. While this classic Spanish summer dish is absolutely gorgeous, I’m a little mad these fancy glasses from my grandmother might be stealing the show…

Now the question… how much to blend?!

Have you heard of einkorn wheat?

This delicious meatball and pasta dinner is a wonderful way to celebrate the beauty of einkhorn, the world’s oldest cultivated wheat. It has never been hybridized or altered by modern farming, which means:

New Recipe: Dandy Nettle Pesto

This is one of my favorite Spring and Summertime tonic recipes to share with the community, because it is so nutritious yet so easy! Stinging nettle and dandelion are among the most nutrient-dense food herbs Mother Nature has to offer us, and both outshine mainstream salad greens like kale, spinach, and arugula when it comes to vitamins and minerals.

This recipe is also quite versatile in that you can swap in whatever bitter greens you have access to this season. If you’ve taken one of our culinary herbalism workshops or classes, you’ve probably seen some version of the herbal staple demonstrated with your own eyes. Enjoy!
