Meal-Prep Recipe of the Week:
Cranberry Steel Cut Oats
Serves 2
Ingredients:
2 cups fresh or frozen cranberries
2 Tbsp fresh orange juice
2 Tbsp pure maple syrup
1 cup filtered water
1 cup unsweet almond milk
1 cup steel cut oats
1/3 cup applesauce
2 Tbsp coconut sugar
1/2 tsp ground cinnamon
1 pinch ground ginger
1 Tbsp flaxseed meal
*for serving - melted nut butter and crushed raw nuts
Directions
1.) Preheat oven to 400F degrees and add the cranberries to a small baking dish with the orange juice and maple syrup. Toss to combine. Bake for 15-20 minutes or until they burst and are tender.
2.) In a medium saucepan, add the water and almond milk. Bring to a boil. Once boiling add the oats and applesauce. Lower heat to a simmer, cover and cook for 15-20 minutes or until your preferred texture.
3.) Once the oats are done, remove from heat and add the coconut sugar, cinnamon, ginger and flaxseed meal. Stir to combine and add more milk if too thick. Taste and adjust flavor as needed.
4.) To serve, divide the oats and cranberries between two serving bowls. Top as desired with melted nut butter and nuts and enjoy!
