Ingredients:
1 tablespoon allspice berries
1 tablespoon dried thyme
1 tablespoon brown sugar
1 tablespoon ground nutmeg
1 tablespoon ground cinnamon
2 teaspoons ground ginger
2 teaspoons black pepper
2 teaspoons smoked paprika
1 teaspoon cayenne pepper
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon ground cloves
4-6 Scotch bonnet peppers (adjust to taste)
1/4 cup soy sauce
1/4 cup olive oil
1/4 cup apple cider vinegar
1/4 cup orange juice
2 green onions, chopped
1 small onion, chopped
4 cloves garlic, minced
1-inch piece of fresh ginger, grated
Juice of 1 lime
Recipe:
Prepare the Peppers and Aromatics:
Remove stems from the Scotch bonnet peppers. For a milder seasoning, remove the seeds.
In a blender or food processor, combine the Scotch bonnet peppers, green onions, small onion, garlic, fresh ginger, soy sauce, olive oil, apple cider vinegar, orange juice, and lime juice. Blend until smooth.
Mix the Dry Ingredients:
In a bowl, combine the allspice, dried thyme, brown sugar, nutmeg, cinnamon, ground ginger, black pepper, smoked paprika, cayenne pepper, salt, garlic powder, onion powder, and ground cloves. Mix well.
Combine and Blend:
Add the blended wet ingredients to the dry spice mix. Stir until thoroughly combined to form a paste.
Marinate:
Use the jerk seasoning paste to marinate your choice of meat (chicken, pork, or fish). Ensure the meat is well-coated and allow it to marinate in the refrigerator for at least 4 hours, preferably overnight, for the best flavor.
Cook:
Grill, bake, or smoke your marinated meat until fully cooked, ensuring the internal temperature reaches a safe level (165°F for chicken, 145°F for pork and fish).
