Personal training & nutrition coaching In 2011, at age 45, I was overweight and unhappy. That opportunity came to me in January 2019.

I made the decision to do something about it and started working with a personal trainer. I lost a significant amount of weight and even participated in three NPC bikini competitions in 2013. Protein pancake time. Did it a little differently this time. No oatmeal. Four scoops of protein powder and a whole container of egg whites. Whipped the s**t out of it. And whipped a couple of times in between cooking. Used a quarter cup measuring scoop. The entire batter made 16 pancakes. It breaks down to 48 cal ea, negligible fat not even worth counting, 1 carb and 9 protein each

Another experiment. “Meat” loaf. It came out really good except I probably should’ve put an egg or two in to keep it together after cutting it. It’s a little runny but full of flavor and it made 8 servings.193 cal, 13 carb, 9 fat & 13 protein!

Decided to make some protein pancakes this morning. Bought the cutest little pan yesterday and it’s a perfect size. Each pancake breaks down to 64 cal, 5 carbs 0.5 fat & 9 protein

A little bit of veggie meal prep today! Spaghetti squash and asparagus along with broccoli and already prepared sweet potatoes. Tried the seeds in the air fryer they actually came out really good! Measurements are 3 Oz of each and 4 asparagus spears per container.
