Our organization is the oldest, largest and most prestigious international society of gastronomes in the world. The Chaîne des Rôtisseurs unites industry professionals (including many of San Diego’s finest chefs) with amateur gourmands by participating in and promoting the culinary arts. Based on the great traditions and high standards of the medieval French guild of rôtisseurs or "meat roasters," our confrérie (society) focuses on celebrating the pleasures of the table.

This fantastic foie gras focused, wine-paired dinner, held at the exquisite Fairbanks Ranch Country Club, featured Executive Chef Frost, French Master Chef Patrick Ponsaty of Bellamy's, Executive Chef James Montejano of La Valencia and Executive Chef Davin Waite of Wrench & Rodent. These four amazing chefs prepared an excellent menu to help us celebrate the return of foie gras to California and our plates.

The San Diego Bailliage celebrated the holiday season together at the legendary Hotel Del Coronado. A unique dining experience for our members was created with a temporary kitchen set up within the ballroom, where we were able to watch our courses receive their final preparations and plating. This combined with the beautiful holiday decorations, the San Diego Bailiage enjoyed a wonderful holiday meal surrounded by friends and family.

In collaboration with the 11th Annual San Diego Bay Wine & Food Festival, the San Diego Bailliage came together for a night of extraordinary food and live bidding to raise scholarship funds for continuing education in the culinary arts, enology, viticulture and hospitality. With 13 (yes, 13!) featured celebrity chefs and amazing live auction lots, this dinner was unlike any other.

The San Diego Bailliage 2014 Induction Dinner was held at the Rancho Valencia Resort & Spa's Veladora Restaurant. Chef Moiles created an excellent menu for us to celebrate elevated positions and new members.

We had a wonderful experience at the La Jolla Playhouse for a matinee showing of Sideways! We enjoyed a meet and greet with the actors and a tasting of the wines featured in the play. Here, members of our Bailliage pose with actors Nadia Bowers, Sean Allan Krill and Zoe Chao.

We celebrated wine and food from multiple regions of the world with culinary delights from Japan, Spain, France and the United States and over 100 bottles of wine from the Falks' cellar. The International Summer Soiree was a Mondiale event open to all members of the Chaîne des Rôtisseurs as an introduction to the Mondiale and the Chaîne.
