This rainbow stew was so delicious AND nutritious 😍 I love adding a variety of colorful veggies and fruits to dishes for the antioxidant benefits! Try this recipe out for a quick, easy, filling meal!
•Rainbow stew w/ quinoa 🌱
You will need:
-1 tbsp. Olive oil
-1 red onion
-2-3 stalks celery, chopped
-3 cloves, minced garlic
-2 tsp. Salt
-4 cups vegetable broth
-1 package of cubes butternut squash
-1 red bell pepper chopped
-1 green bell pepper chopped
-1 tsp cumin
-1/2 tsp oregano
-pinch of red pepper flakes
-3/4 cups tri colored quinoa uncooked
-1.5 cups water
-1/2 cup corn (I used frozen)
-1 can black beans, rinsed and drained
-1 can kidney beans, rinsed and drained
-pinch of parsley
- lime juice to taste
1. Heat oil in a large saucepan over medium-high heat. Add onion and celery; cook and stir for about 5 minutes. Add garlic and 1 teaspoon of salt. Stir in broth, squash, bell peppers, cumin, oregano, and red pepper flakes; bring to a boil. Reduce heat to medium; simmer for 20-25 minutes.
2. Rinse quinoa. Bring 1.5 cups of water and quinoa to a boil in medium saucepan. Reduce heat to low; cover and simmer for for 15-17 min.
3. Stir corn and beans into stew; cooking for an additional 5-10 minutes. Stir in parsley and lime juice. Serve with quinoa.
To cut down on prep time, use pre cut vegetables and canned beans (make sure to rinse to reduce sodium intake). Perfect for leftovers, too!

Throughout college, I knew I wanted to help others live a healthy life, preventing discomfort and disease from occurring. I had planned to go onto medical school upon graduation, but did not enjoy the western approach to health as much as I thought I would, especially after working in the medical environment as a medical scribe, EMT, and research assistant.
For spiritual and ethical reasons, I felt drawn to a vegan and plant-based lifestyle back in March, earlier this year. I did not expect it to transform my life in such a strong way! It made me feel amazing on the outside AND the inside, while improving my blood sugars significantly, improving sleep, and increasing energy levels, too.
I felt so happy and excited when discovering the plant-based lifestyle, that I decided to become certified in holistic nutrition and start my own business as a health coach specializing in it. To understand the evidence based research behind plant-based nutrition and how it is the optimal lifestyle for health and longevity, I felt compelled to share this with everyone that I know!
You do NOT need to be vegan in order to eat more plants. Everyone can benefit from including more plant-based foods into their diet!
My program aims to meet you where you currently are and taking small steps together to achieve your health goals! Whether that means achieving your ideal body weight, decreasing inflammation, preventing (or even reversing!) type two diabetes/heart disease/certain forms of cancer, or increasing knowledge about the ins and outs of plant-based eating, this program will help educate, guide, and support you!
