I certainly enjoy chocolate! Found this article from Food and Wine about top chocolates. I agree that Valhrona is my top choice (And throughly enjoyed our visit to the Valhrona Cite du Chocolat while we were on the France trip in September.)
I've used Guittard and Callebaut in baking as well. We've been to the Olive and Sinclair factory in East Nashville for a tour a number of years back and I like eating it, but haven't baked with it. TCHO is the only one of this group that I am not familiar with.
Another interesting chocolate is Taza Chocolate Makers - I've seen it in Whole Foods and other stores, but saw the name on the side of a building as we were walking by to Carly's Boston Apartment - detoured and explored their factory as well. (It's near the Green Line Union Square Station)
The Taza and Olive and Sinclair are available locally at Whole Foods (may be at some other retailers, but not sure). The others are available online.

Excited about the upcoming Holiday Breakfast Class! Will be held on Saturday November 22nd and Sunday November 23rd.
Working on the recipes for the class. We’re going to do a Chai Scone in honor of Carly and her love of Chai Tea Lattes….. Then two cinnamon recipes - Cinnamon Sugar Muffins and a Cinnamon Slab Pastry.
We’ll also do a breakfast casserole.
Will have registration set up early next week. Stay tuned……

Very excited to welcome Hollie and Franklin Spiceworks to Huntsville! If you've been in a class, you've heard me talk about Savory Spice in Franklin (and other Nashville locations). Well, they are opening a store here in Huntsville! They will be in Mid-City beside Tupelo Honey.
I'm looking forward to being able to stock up locally rather than having to drive to Nashville!
They are hiring for this location, so if you know anyone interested in a "spciy" job, this is it!

As I mentioned in my Day 7 post, here are some photos from our family trip to Southern France in 2009. We actually stayed at a B&B in Arles and were able to stay and experience the bull races. As I mentioned, the bulls are not hurt during the races and amazingly, neither were the Razeteurs.
One or the Razeteurs gave Carly the red ribbon after he took it from one of the bulls.....
