Join us on Sunday, August 31st, 2025! We’re throwing open the doors at our Backyard Pitmasters HQ location (Near Downtown Houston) for an extended-format ChickensU class you won’t want to miss. This is a rare treat, and always one of our most fun classes of the year.

Built on our own pitmaster's favorite recipes and know-how, this special edition ChickensU will teach you how to smoke, grill, and rotisserie a chicken like a pro right in your own backyard. You’ll learn it all: chicken anatomy, types and selection, pros and cons of injection vs brining, how to spatchcock, perform the 8-piece breakdown, truss like a pro, and carve your masterpiece to perfection.

And because we believe in learning by tasting, you’ll enjoy an incredible menu along the way:

We’re in the process of updating our SeafoodU class, and this is your chance to experience it in a way no one else has. On March 30th, we’re hosting a special edition of SeafoodU at our Backyard Pitmasters HQ & Test Kitchen in Houston, where we’ll be testing new techniques and recipes that could become part of the next evolution of the class.

For the first time, we’re hosting this class in our own test kitchen, giving us access to every grill, smoker, and live fire setup we use to develop and refine our methods. Sydney, Jon, Taylor, and the crew will be leading the way, exploring fresh approaches to cooking oysters, scallops, lobster, salmon, snapper, and more over fire.

What to Expect:
