To determine the molarity of an unknown substance, we mix it with another substance. Why? Well, because chemicals have a tendency to neutralize eachother when they reach equilibrium. With that being said, when the solution changes color that means that you have found the concentration of your unknown substance.

Copper Oxide + Hydrochloric Acid + Zinc... The Copper Oxide strips electrons off of the Hydrogen atoms in Hydrochloric Acid, and Zinc electrons off of Zinc, which causes both the Hydrochloric Acid and Zinc to ionize in the Copper Oxide solution... eventually making the mixture return to a clear(ish) color.
