Seeing the devastation in Pensacola and Barnardsville was heart-breaking 💔 Please do not go to Pensacola, road infrastructure is very dangerous, with only one direction passable along a steep drop into the river. Road will fail with much more traffic. I was leading a search and rescue team in bc I had the most knowledge of the area at our Yancey outreach post. National guard is in Pensacola and they have an abundance of supplies.

Amaranth porridge from the land! We grew a gorgeous burgundy amaranth this year, threshed, and winnowed the seed. And most importantly my child actually enjoys it! I struggle to grow and forage much that she actually enjoys, so this is a major accomplishment as a parent and forager. We cooked this up with foraged pears, sassafras, spice berry, and cinnamon then topped with yogurt, beauty berry, anise hyssop, portulaca, and maple syrup!
Amaranth is a gift in the garden (or out). It's leaves are good salad greens when young and great cooked green when older age comparable to spinach in nutrition. The seed is very similar to quinoa, a close relative. It makes a great porridge which is high on protein, essential amino acids, high on fiber, and contains calcium, iron, potassium, phosphorus, and vitamins A, C, and E. 8 haven't seen much written about the root, but it tastes like a slightly spicy and fibrous beet that makes a great stock option for borscht.
This plant will produce loads of food throughout the season and happily reseed if you'll just let it.

Sea asparagus aka sea beans aka glasswort is a scrumptious salty succulent! Salicornia ambigua and close relatives in the genus have been eaten by indigenous peoples around the world.
The greens are high in omega fatty acids and can be eaten raw, cooked, or fermented. The seeds can be pressed for a nutty and nutritious oil.
Salicornia spp. can be cultivated with saltwater, giving it the superpower of being able to grow where most plants cannot!

A few foraged fruits from Florida here, but mostly fruit stand fare! What amazing winter abundance south Florida has this time of year! My brother just introduced me to coco plums, a sweet and creamy delicacy indeed. Can anyone name all of these tropical delights?
