One of my favorite wines I’ve made that is just as enjoyable in a dish. 🍲

This Roussanne was cooked with chicken wings, eggplant with feta and mint, asparagus with lemon zest and butter and roasted potatoes with homegrown herbs (organic thyme, sage & oregano) 🥂

Harvesting some beautiful Roussanne fruit today from Fire Oak Vineyard!

I decided to harvest today based on my desired flavor of this Roussanne fruit.

Normally when you decide to harvest, you look at the sugar content and acidity of the fruit. Because the temperatures are so high, the sugar content is raising & the acid content is depleting very quickly. This harvest I decided based on the flavor profile instead to ensure we conserve the aromatic structure of Roussanne!
