I sent this first text in September 2021 to a friend. I sent the second one almost 2 years ago to a friend. So much has happened since January 2020. And, as you can see, I’m still at it. I was in the gym today, as a matter of fact. Still learning, still trying, still achieving. Working through life.

There’s something to be said for consistency and the wisdom you get from the day to day, over and over. It’s gold.

This is a rice pilaf we made for the photo shoot on Wednesday. Although we aren’t yet skilled in food photography, we can turn out really awesome tasty dishes that don’t have highly processed ingredients. This recipe calls for an instant pot but you can just as easily use a pot on your stove. And if you like unsweetened coconut, that would be a tasty mix in!
