These blueberry cheesecake rolls are dangerously good. Like, you'll eat one warm from the oven and immediately start thinking about the next one. The outside gets this beautiful golden crust with a light sugar crunch, and inside there's this swirl of creamy cheesecake filling and jammy blueberries that just melts on your tongue. They're fancy enough to impress but honestly so easy you could make them on a random Tuesday.
The blueberries get all soft and syrupy as they bake, and that cream cheese filling stays rich and velvety. I love how the tartness of the berries cuts through the sweetness perfectly. It's like eating a slice of cheesecake, but way more fun.
**INGREDIENTS:**
* 1 can refrigerated crescent roll dough (or puff pastry works too)
* 8 oz cream cheese, softened
* ¼ cup granulated sugar (plus extra for topping)
* 1 teaspoon vanilla extract
* 1 cup fresh or frozen blueberries
* 1 tablespoon lemon juice
* 2 tablespoons melted butter
* Powdered sugar for dusting
**INSTRUCTIONS:**
Preheat your oven to 375°F and line a baking sheet with parchment paper.
Beat the cream cheese, sugar, and vanilla together until it's smooth and fluffy.
Unroll your dough and press the seams together so you have one flat rectangle.
Spread the cream cheese mixture evenly over the dough, leaving about half an inch around the edges.
Toss the blueberries with lemon juice and scatter them over the cream cheese layer.
Roll the dough up tightly from the long side, like you're making cinnamon rolls.
Slice into 8 equal pieces and place them cut-side up on your baking sheet.
Brush the tops with melted butter and sprinkle with a little granulated sugar.
Bake for 20–25 minutes until they're puffed and golden with crispy edges.
Let them cool for just a few minutes, then dust with powdered sugar and top with fresh blueberries.
