It’s been awhile but I made a fresh batch of 24hr ferment SCD yogurt last night.

Making yogurt seemed intimidating at first but it’s really quite straight forward. I make mine with only the best local heavy cream, . No additives. Cream from happy cows. It makes the creamiest of yogurt. Have you ever made your own yogurt?

How many times can I post about a bowl of chili? How many different ways is there to make chili???

This edition used ground lamb from , cubes of butternut squash I had in the freezer, bell peppers and poblano peppers from , two cans of kidney beans, a can of fire roasted tomatoes, chicken stock, and some greens onions that were still hanging on in our garden. And of course a bunch of spices.Topped with a drop of 24hr yogurt.

What warm and cozy meal have you been cooking up lately?

I made this Thai Broccoli Fish Stew from ’s cookbook “What the heck should I cook?” and it turned out pretty good! I needed to make a few substitutes, kale for spinach, coconut aminos for tamari sauce. It’s pretty heavy on the broccoli, definitely something I can’t eat everyday but I’m glad I tried it!

Fridays are busy days for me so I often either rely on leftovers or do a crock pot meal on Fridays.

Today I through together a sort of “zuppa toscana” soup. I used local pasture raised sausage from , kale from our backyard, kidney beans (because we had too many of these in the pantry), and zucchini from at the farmers market.

To serve we mixed in one spoonful of homemade yogurt. It was delicious though I may have gone a tad too heavy on the red pepper flakes.

I did a quick little preserving project yesterday. The first one of the season for me! I was inspired by post last week for . BUT I skipped right over the “lazy” part because I didn’t read the recipe before peeling and slicing all my peaches! You can leave the peels on for this recipes if you’d like! The peaches were dying fast on my counter so I cut them all up and put them in the fridge on Friday evening then cooked and canned them on Saturday afternoon.

When you don’t have large chunks of time it can be good to split up the different parts of any preserving recipe.

In this recipe I used local fresh peaches, local honey from and a bit of lemon zest. For the full recipe and instructions go check out ’ website and search “lazy peach preserves”. I highly recommend Marissa’s book “Naturally Sweet, Food in Jars” for more refined sugar free preserving recipes.

We’ll be enjoying these peach preserves on steel cut oats for months to come.

What have you been canning this year?

Tonight we had another meal featuring protein from .

The Center Cut Company is a business owned by farmers local to me, here in south central PA. This wife and husband team pasture raise chickens and lambs. Pasture raised meats are better for you, the environment, the animals, and the farmer. It maybe more expensive than the factory farm meat you find at the grocery stores but it is worth eating less meat to be able to buy the good stuff! Also cheaper cuts of meat like these drumsticks can go a long way to flavor a meal full of veggies!

This meal was again based very loosely off a recipe from ’s book, Food: What the heck should I cook?, the Slow-Cooked Chicken Thighs with Kale. I swear not all the recipes in that book are crock pot ones but that’s the ones I gravitate to when super busy. I subbed in drumsticks for chicken thighs and it worked just as well. We also didn’t have cannellini beans so kidney beans went in the pot. We are not a capers or olives family so I just skipped those and it was still a very tasty meal. I added more broth than called for so ours turned out half chicken dinner / half soup. Drumsticks in a crockpot just fall right off the bone after a few hours on high. Delicious.

What is your favorite thing to make with chicken drumsticks?

Sunday Funday. It was a melon morning. I couldn’t resist buying all the melons at the farmers’ market yesterday!

What is your favorite kind of melon? Of these three, the honeydew had the best flavor!

I made a big crock pot full of this chili at the beginning of the week and we’ve been eating leftovers all week for lunch or dinner. It was VERY loosely based off of ’s “Go-To Cremini Chili” recipe in his book “Food: What the heck should I cook?”. I subbed in ground lamb from instead of beef and oyster mushrooms from Whistleberry Farm instead of cremini mushrooms. Plus a handful of other changes but it’s chili so it didn’t matter one bit. I like meals like this because you can pack a whole bunch of veggies all into one bowl!
