Did some this weekend. I had 6kg of beef shoulder clod in the freezer. Decided to make a . The texture is a bit on the crude side since I do not have the equipment to do a proper emulsification. 12 hours smoked with hickory. Now I have to decide who to share it with.

Traveling to Istanbul in October. Charcuterie is one of my hobbies. A very popular item in Istanbul is a Halal beef muscle cure & aged called Pasturma. The 'dark' in the photo has are ready gone through the curing stage. Today i made paste out of sweet & smoked paprika, ground fenugreek, cumin, cayenne, garlic, pepper paste, black pepper & kosher salt.
