Eating whole grains seems to be a huge struggle for most. People don’t want to give up their aromatic Jasmine white rice or their super soft white bread and pastries made of refined flour. I hear you!
For me, it’s not about giving up something but rather trying out something new, something better, and something more nutritious!
This fried brown rice is somewhat of a staple for my family. I use extra virgin olive oil for the polyphenol compounds, tons of garlic for the anti-oxidant properties, smoked paprika, and tons of chopped cilantro for the magical flavor!

Ever since COVID, I’ve been using the daily TV mass to enrich my daily life and jumpstart my day. This is my first time to join their daily advent retreat. It’s short and sweet. I hope you find joy in celebrating Advent as well. It’s a wonderful preparation for the Christmas season. It’s like Lent but the cleansing process for the soul to await the rebirth of the Lord in our heart is different—a sense of hope and longing, just like when a mother is pregnant with her baby and anticipates their coming. I sense that Jesus comes to us each year in many ways depending on where we are in our journey. He comes to me now asking for more faith that the day is soon coming where all His promises and visions in my life will be fulfilled. And He challenges me to have more faith, trust, hope, and above all charity in this Season of transformation. A blessed Advent to all!

I have kept my Father’s commandments and remain in his love.
I have told you this so that my joy might be in you and your joy might be complete. - John 15:10
Does you work give you joy? Do you feel empty at times and just going through the motions? What does Jesus mean when He said, “Remain in my love so that your joy might be complete?”
Sometimes we have so many longings and dreams that make us wish we are not where we are right now. These unfulfilled hopes leave us wanting for more and dissipates our joy. But it need not be so.
Allow God’s Spirit to inhabit your entire being for the day. Make Him manifest through you so your eyes become His eyes, your thoughts His thoughts, your tongue His tongue and your hands His hands, and your heart His most Sacred Heart. You can do this by offering the first choice hours of your day in silence after reading the Sacred Scriptures and inviting Him to fully possess your body, mind, heart, spirit, and soul.
When you leave your prayer room, be mindful of His deep presence in you and allow Him to speak, move, listen, and touch. This requires practice.
Daily habit forms character.
You know it’s His spirit because the fruits of peace and joy become apparent in all your actions.
At the end of the day, you can sincerely say, “The Lord is my Shepherd, there is NOTHING I shall want.”
PRAYER:
Lord, here I am. I have come to do Your will. In surrender, I trust that You will do for me, what is best and perfect. Love me, Lord, and teach me how to love you completely. This is my body, my mind, my heart, my spirit, and my soul. I give them up for You as You gave Yourself up for me.

This poinsettia is dressing up for Spring, shedding its white Christmas costume in exchange for green. How about you? Have you done your Lenten make-over, shedding the old man for the new? Allow the Holy Spirit to breathe fresh air into your life. Everything has a season and for a reason. Slow down and see all the changes God is making in your life. He does things gently, one white petal at a time. Praise Him for His patience!

Jump-started my Saturday with an awesome free virtual community cooking class for the program. is all about eating the same food but preparing and cooking it in a healthier way—where the art of food preparation and cooking meets the science of medicine.
Last weekend, we had our orientation for all participants who registered for the cooking class. This weekend, for our first kitchen hands-on, our awesome chef-registered dietitians taught patients and medical students how to chop ingredients, learn how to turn trash (kitchen scraps) to treasures, make an ordinary high-fat/calorie taco into a mean-lean cuisine without sacrificing flavor, but instead boosting it with more nutritional ingredients so we can eat more without gaining more weight and increasing our cholesterol levels. It’s a very effective format for everyone to learn kitchen tips from certified experts and learn how to deal with health issues using . We hope you’ll be able to join us someday! This is the 2nd week for our 6-week Beginner’s community class (held every Saturdays).
