Veggie tacos for the win on this lovely Saturday 🌮

Here’s how I threw these together:
➡️ Put olive oil in a large skillet on medium heat
➡️ smash avocado, then layer it on the tortillas - sprinkle w/ salt & pepper
➡️ I had leftover veggies from meal prepping last week so I used up some of my Brussels sprouts & diced tomatoes, feel free to use whatever veggies you have on hand
➡️ Topped it off with some cilantro, everything bagel, and salsa.. because I’m obsessed with all of the above 🤣
➡️ Gently place tortillas on skillet and cook until they are crispy

Lovin’ this breakfast combo lately! 🍳
Here are the deets:
➡️ 2 eggs over easy, topped with cilantro, guac, and everything bagel seasoning
➡️ 2 pieces of turkey bacon
➡️ 1 rice cake topped with my homemade chocolate mousse (1 scoop of chocolate protein powder mixed with almond milk.)

Lately, I’ve been setting the intention to dedicate a workout to someone who is unable to move their bodies the way they used to/wish they could.

Not only has this changed my attitude about workout out; it has changed my entire perspective. 💡
•

Exercise isn’t something we HAVE to do, it’s something we GET to do! 🏋️♀️

You may look at this image and see a nicely plated breakfast. You may even think that I eat like a queen every single day based on my timeline. The reality is that 98% of the time I’m heating up a meal-prepped breakfast on a paper plate OR rushing to the car as I eat a cold breakfast.

I enjoy mornings like these. I enjoy mornings where I can cook myself a fresh breakfast, drink my cup of coffee, and look out my window as the sun is practically blinding me - yet it feels so satisfying. We all have things that fill us up with joy and remind us to slow down & this scenario is what does that for me.

I know I should do this more often. I know that it fills me up, inspires me, and sets the tone for an awesome day. So WHY don’t I do this more often?! To be 100% transparent, I have failed to put myself as a priority. When our mindset is in go-go-go mode, we tend to naturally disregard what brings us joy and fills us up.

This week, I haven’t meal prepped any breakfast for the purpose of doing more of what brings me joy. 💃🏼
•

This week, I DARE you to step out of your routine & remind yourself of what brings YOU joy! Notice how incredible it feels to slow down and put yourself as a priority - even if it’s for just a short period of your day, I guarantee that it will enhance your mood! 😎☀️🌿
