The best Christmas morning breakfast egg bake ever!

I love the holiday's. But I don’t want to be cooking in the kitchen Christmas morning. I want to be drinking coffee by the fire and enjoying my grandsons. 🤍

This is why I tweaked recipe after recipe to find a GREAT morning egg bake that YOU can make 24-48 hours BEFORE Christmas morning and it will bake up divine.

You are going to love the ease of this recipe.

What makes this so special is the hash browns. The difference between using hash browns and cubed bread is huge. (Plus it makes it gluten free. ❤️)

EASY. MAKE AHEAD.

Hospitality is a message you give others about their value. It’s not about impressing people but bringing comfort and care.

Yield: Makes 12-14 servings

Ingredients
1 pound mild chicken sausage
1 pound hot ground chicken sausage ( I found this at Whole Foods)
1 (30-ounce) package frozen seasoned hash browns
1 large chopped onion
1 large tablespoon fresh chopped garlic
1 four ounce can of chopped green chilis
8 oz chopped fresh mushrooms
1 bag fresh spinach
1 red chopped pepper
1 1/2 teaspoons salt, divided
1 teaspoon pepper
2 cup shredded Gouda cheese or cheese alternative
8 large farm fresh eggs
2 cups skim or almond milk. I prefer almond milk as it is healthier and it tastes great in this recipe!

Preparation
Cook sausage in a large skillet over medium-high heat, stirring until sausage crumbles and is no longer pink. Drain well.

Prepare hash browns according to package directions, using 1/2 teaspoon salt and pepper.
Stir together hash browns, sausage, and cheese. Add mushrooms, peppers, chilies and spinach.

Pour into a lightly greased 13- x 9-inch baking dish.

Whisk together eggs, milk, and remaining 1 teaspoon salt. Pour evenly over potato mixture.

Can be in your refrigerator for up to 24 hours. Cover well with foil.

Bake at 350° for 40 minutes until bubbly and hot.

Take off foil for the last 5 minutes to brown top.

Serve with a good Salsa and enjoy!

My number ONE Christmas appetizer this year!

Seriously this is just incredible. The buttered  crispy sage, and mascarpone cheese add the most delightful combination.

I added dried cherries and oh my word! 

I double the recipe because I’m going to freeze one for the New Year’s Day party that we’re hosting!

POMEGRANATE WHITE CHEDDAR, TOASTED ALMOND DRIED CHERRY AND CRISPY SAGE CHEESEBALL.

INGREDIENTS

2 tablespoons butter
10 fresh sage leaves
1 (8-ounce) block cream cheese, softened
4 ounces mascarpone cheese, softened
6 ounces freshly grated sharp white cheddar cheese
1 cup sliced almonds
1/4 teaspoon salt
1/4 teaspoon pepper
Several dashes of red pepper if you want some kick
1/3 cup dried cherries
1 1/3 cup pomegranate arils

Crackers for serving

INSTRUCTIONS

Heat a skillet over medium heat and add butter. Once it’s sizzling, toss in the sage leaves and cook until crispy – flipping once and cooking about 1 minute per side. Remove the sage leaves and place them on a paper towel to crisp up a bit. Set the butter aside.

In the bowl of your electric mixer, combine the cream cheese, mascarpone and cheddar cheese. Beat until combined, then add in the almonds, sage leaves, remaining butter, salt and pepper. Add cherries. Mix on low speed until combined, about 1 minute, scraping down the sides and the bottom if needed. Take the cheese mixture out of the bowl and add 1/2 cup of the arils and mold it into a big ball as best you can. Roll it in plastic wrap and place it in the fridge for 30 minutes.

Meanwhile, place the arils on a paper towel and pat them completely dry. Let them sit out while the cheese is chilling to remove as much liquid from them as possible. Add slivered almonds. Toss together.

After 30 minutes, mold the cheese into more of a smooth ball. Add the arils and almonds to a plate or baking sheet and roll the ball through them, using your hands to press arils into all the cracks and crevices. You will need to gently press so the arils adhere to the cheese. At this time, you can serve it immediately or keep it in the fridge until ready to use. If you want to make it ahead of time, you can rolls the ball 1 to 2 days beforehand. I’d wait until the night before or morning of to add the almonds and pomegranate arils, and you may need to let the cheese come to room temp a bit so it’s sticky enough.

Also freezes great!

Many of you might know that I am down 10 pounds with my amazing hormone, balancing skinny drops! ( I’m happy to send you information send me a p.m.)

I feel GREAT! ⭐️⭐️⭐️⭐️⭐️

But in doing so, I have started to create very healthy recipes and I wanted to share this one with you.

It’s absolutely delicious! High in protein and  crunchy veggies.

The meatballs, freeze fabulously, and they’re very good in the Mamma Mia meat sauce!

Buffalo Herb Chicken Veggie Meatballs.

Crock pot and oven version

▢1 1/2 pounds ground chicken or turkey
▢3 tablespoons Italian seasoning
▢1 tablespoon dijon mustard
▢2 large eggs
▢ salt and black pepper
▢1 onion, quartered
▢1 tablespoon chopped garlic
▢1 cup slivered carrots and 1 cup chopped celery
▢ 1 Tablespoon hot sauce
▢1 bunch of herbs chopped dill and basil are my favorites

Add all ingredients and mix lightly in a bowl . Season with salt, and pepper. Mix again to combine. Coat your hands with oil, and roll the meat into tablespoon-size balls (will make 15-16 meatballs). Add oil and place the meatballs in the bowl of your crockpot.

Pour over 1 1/2 cup chicken broth over meatballs. Add the additional onion and garlic. Cover and cook on low for 3-4 hours or on high for 1-2 hours.

Or you can also bake in a 400 degree oven for 20 to 25 minutes until the internal temp is 160. If using this cooking form pour a bit of oil and hot sauce over the meatballs before placing in oven.

Nothing says Sunday dinner like a delicious Mama Mia meat sauce and “pasta”!

This is one of my all-time favorites.

Because I am using the hormone, balancing weight loss Drops (down 10 pounds and feeling great…. if you’re interested, I’m happy to send you information and a doctors review) I used my garden squash as my designated pasta ! 🤍💪💯

It was divine!

Another great healthy dinner recipe from
Start Simple cooking.

Texas Caviar. 🤍

A fresh, zesty, and flavorful, this dish is loaded with black eyed peas, black beans, tomatoes, bell pepper oranges and avocado all drizzled in a cilantro lime dressing. This easy to make recipe can be served as a side dish, appetizer, or salad!

INGREDIENTS
▢1 15.5 ounce can black eyed peas, drained and rinsed
▢1 15 ounce can black beans, drained and rinsed
▢1 15.25 ounce can mandarin oranges
▢½ cup cherry tomatoes, sliced
▢1 red and 1 yellow bell pepper, diced
▢1/2 cup red onion, diced
▢2 serrano peppers, diced
▢1 avocado, diced
Add jicama in corn kernel size bits for crunch
Add diced ripe mango

DRESSING
▢½ cup extra coconut oil
▢ 1/3 cup white Wine Vinegar
▢1 tsp salt
▢2 cloves garlic, minced
▢1/4 cup fresh cilantro
▢1 lime Juice, fresh squeezed
▢1 tsp dried oregano
▢3 tbsp monk fruit
1 teaspoon cumin.
1/2 pepper or red pepper flakes

INSTRUCTIONS

In a medium size mixing bowl add the black-eyed peas, black beans, corn, cherry tomatoes, bell pepper, red onion, oranges and diced serrano peppers. Stir to combine.

In a jar add the ingredients for the dressing, shake to combine.

Pour the dressing over the black-eyed peas mixture. Stir to combine.

Cover and store in the refrigerator. Allow to marinate for at least 2 hours before serving.
Add diced avocado just before serving.
