Phew! How’s everyone doing?? I legit had a mini panic attack this morning thinking I was hacked!

What did you do while the Metaverse (Facebook, Instagram, Threads) was down? I got a cute haircut (thanks Lura Landoll!) and made some baba ghanoush!

PS: When you use social media for your business it’s a scary thing to think you’ve lost your account. But that’s one of many reasons I also maintain other ways to contact my team and clients 💕.

I’ve been having FOMO with the new Hurts donuts but don’t want to wait an hour for donuts. So in today’s sourdough adventures, I made my own apple fritters and fried them in the beef tallow that I rendered last May when we got our half beef. Slap a bonnet on me and call me Caroline “Ma” Ingalls lol.

I ate and left no crumbs. Literally and figuratively 😂.

Just what the doctor ordered. Cooking/baking has always been a good pick me up for me. And since I can’t always eat everything myself, I often share. I’ve always joked if I have ever made you food, you know I love you.

This I’m keeping ALLLL to myself though. Just the endorphine rush I needed. It’s delicious and at under 100 calories, with natural sugars, and added protein…hardly any guilt 😉.

DATE BARK AKA HEALTHY SNICKERS

24 dates, cut in half and put removed
1/2 cup natural peanut butter
2-4 TBSP coconut oil (optional), melted
1 scoop Power Up Caramel Protein Blend
1/2 cup chopped almonds
4 oz dark chocolate chips, melted

Lay out dates on quarter sheet pan liner 6 across and 4 rows, cut side down. Smash each date with a glass and then flip over cut side up (you could also put them cut side up to start and smash which is what the recipe I found said to do but I found it too sticky and preferred this method on our liner)

Melt natural peanut butter. Add protein powder. If it’s too thick add melted coconut oil to get it nice spreadable consistency. Spread over dates.

Sprinkle chopped almonds over dates. Spread melted chocolate over top. Freeze for 30 mins then remove from liner and break or cut into pieces.

Ok how legit is this?! My “little food company” Epicure is now running commercials to help us increase awareness of our brand! Corporate is doing it for us as another way to grow and have more success changing more plates and lives!

Me trying to be healthy but then also wanting to eat all the holiday treats 🤪. My body was not happy though as my stomach hurt from consuming all the sweets that it’s not used to 😅. And I “gained” 2 pounds in the last week lol.

Yum! I am loving how EASY these hot chocolate bombs are using this silicone muffin cup. Maybe 5 minutes to make and easy enough for kids to help which means it’s a great activities to occupy them while they’re off school 👏.

Here’s what you need:
🍫 High quality chocolate
♨️ Hot cocoa (recommend Epicure Dark and Dreamy - no artificial ingredients and less sugar!)
🤍 Mini marshmallows
❤️ Candy canes, sprinkles, other decorations
💜 Epicure silicone muffin maker

1. Melt your chocolate in the microwave for about 30-45 seconds until smooth. Coat the surface of a muffin maker cup and then put in freezer a couple minutes to harden. Paint a second layer of chocolate on the muffin maker cup. Return to freezer to harden again if needed.

2. Put 2 TBSP of Epicure Dark & Dreamy Hot Cocoa Mix in cup. Tap muffin maker gently on counter to level.

3. If using, place a candy cane into the center of the muffin maker. Fill to top with more chocolate taking care to make sure it touches the edges to encapsulate the cocoa. Top with marshmallows. Use extra chocolate to drizzle over top and/or paint on side to adhere decorations like crushed candy cane or sprinkles. Return to freezer to set.

4. When ready to enjoy: gently push bottom of muffin maker to unmold the chocolate bomb. Heat 1 cup of milk. Drop chocolate bomb into a mug and pour hot milk over top or hold candy cane to stir until dissolved. If desired, top with frothed milk.
