Thank you for visiting my page! My name is Dr. Lena and I am a multilingual occupational therapist!
“You can’t eat dessert with gestational diabetes.”
That’s what I thought too.
But here’s what I’ve learned—blood sugar isn’t just about what you eat.
�It’s influenced by timing, meal composition, and what you ate beforehand.
Before this, I had a full meal built around:
�• protein
�• healthy fats
�• fiber
This is the pattern I follow: protein + fat + fiber first… then carbs.
So when I ate this after, my blood sugar barely changed.
And this wasn’t just any pastry.
It was an organic sourdough croissant made with minimally processed ingredients—which matters.
Fermented sourdough can be easier to digest, and the combination of fermentation + fat can lead to a more gradual glucose response for many people.
Of course, this is my experience—but it’s why I focus so much on gut health and meal structure during pregnancy.
Daily habits that support this for me:
�• kefir
�• sauerkraut
�• whole, minimally processed foods
�• balanced meals before adding carbohydrates
Most days, dessert looks simple—fruit with protein or healthy fats, or something homemade.
But sometimes… it’s a croissant with my toddler.
And that flexibility is what makes this sustainable.
