Avocado Citrus Salad

1/2 avocado, sliced
1/2 small grapefruit, peeled and segmented
1 small clementine, peeled and sliced
1 teaspoon lime juice
1/2 teaspoon agave
1/8 teaspoon kosher salt
1 teaspoon pomegranate seeds
Mint leaves, for garnish

1. In a small bowl, stir together honey, salt, and lime juice. Toss avocado, grapefruit segments, and clementine slices in lime mixture.
2. Top salad with pomegranate seeds and mint leaves.

Over the last year my life has been thrown upside down. I recently went through a divorce, moved out of my house, lost a furry baby and started questioning all of my life decisions, but thankfully the universe has given me the gift of understanding. I believe everything that happens is meant to happen. I am no longer the same person I was a year ago and you know what? I am so thankful for that! I want to hear your story. What struggles have you been through that you just can't seem to let go?

It is one of my truest beliefs that spirituality and veganism go hand in hand. Everything on this earth is connected. Once setting the intention to be kind to everyone, including all animals, the spirit lightens. Love flows into the heart and mind and because of the kindness and compassion you have chosen to outwardly express it becomes easier to feel this within and towards yourself.

I've said this many times before but here I go again... the future is vegan.
