Brownie Christmas Tree Cupcakes (recipe below) – Fudgy brownie cupcakes are topped with a marshmallow buttercream and easy to make Christmas tree design.

Brownies
¾ cup (1 ½ sticks) unsalted butter), melted
1 cup granulated sugar
½ cup cocoa powder
2 large eggs
2 teaspoons vanilla extract
½ teaspoon salt
¾ cup all-purpose flour
Marshmallow Buttercream
1 stick unsalted butter, softened
½ cup marshmallow fluff
1 teaspoon vanilla extract
2 ½ cups powdered sugar
1 tablespoon milk
Christmas Tree Decoration
Ice Cream Cones
Green food coloring
Confectioners’ sugar

1. Preheat oven to 325F. Line a 12-count muffin tin with muffin liners.
2. In a large bowl, whisk together butter, sugar and cocoa powder until combined. Whisk in the eggs and vanilla extract. Using a wooden spoon or rubber spatula, stir in the flour and salt until combined. 
3. Scoop brownie batter into prepared muffin tin. Bake in preheated oven for 22 minutes. Allow to fully cool.
4. In a large bowl, or the bowl of a stand mixer fitted with the paddle attachment, add butter and beat until light and fluffy. Add in marshmallow fluff, vanilla extract, powdered sugar and milk and beat until light and fluffy. You want the frosting to be a bit stiffer for piping the Christmas tree design.
5. Once brownies are cool, spread a layer of white frosting on each brownie cupcake. Add an ice cream cone on top of the white frosting (you can fill the cone with candy if you’d like), white, with the point of the cone facing up.
6. Dye the remaining frosting green. 
7. Use an open star tipped piping tip (I used Wilton 1M) and pastry bag or zip-top bag. Fill the green frosting in the piping bag. Starting at the base of the ice cream cone, pipe star shaped dollops.
8. Sift confectioners’ sugar onto the cupcakes for a snow effect. Enjoy!
