It is cold and rainy so I thought you may want a hearty soup.

Winter Vegetable soup

3 large leaks (1to 1 1/2) White parts only
2 Garlic Cloves (minced)
3 large carrots (Diced)
1 Celery Stalks (Diced)
2 Medium Turnips (cut into cubes)
1 Rutabaga (cut into cubes )
1 can of Cannellini or Navy beans rinsed
Add 2 bay leaves 2 tsp Thyme dried 2 tbsp parsley
Dutch oven add all ingredients to water covering veggies 1 1/2 quarts
Bring to a boil add chicken base ( Better than Bullion) 1 tbsp or to taste.
Then bring heat to simmer for about 45 min
2 cups heavy cream add 2 tbsp of cream cheese mix together and add
Let simmer till it mixes in well
Add salt and pepper to taste

Friendly Vegetable Rice Soup
• 2 Tbsp. Extra Virgin olive oil
• 1 large onion (finely chopped)
• 1 clove garlic (finely minced)
• 3 stalks celery (thinly sliced)
• 3 large carrots (diced)
• 2 whole bay leaves
• 1/4 tsp. salt
• 1/4 tsp. ground black pepper
• 1 tsp. dried oregano
• 1/2 tsp. dried thyme
• 4 cups vegetable stock
• 2 cups Riced Cauliflower
• 1/2 cup parsley (finely chopped)

Brown onion in a Dutch oven add garlic celery carrots and seasonings.
Keep the cauliflower out till the last 7 mins soup is cooking then add.
When the vegetables are cooked it is done.
If you don’t have Better than bullion vegetable add chicken flavoring.
