Today Teles and I made 25 (kidney) cookies for ! We made them to spread awareness of the 25 people who die each day waiting for kidneys donors - isn’t that insane? We can do better.

We had fun making low sodium blueberry muffins together! You can do it too! 🫐🧑‍🍳 We fast forwarded through the prep so you can see the finished product!

Bakery-Style Blueberry Muffins:

Makes: 6-8 muffins

Prep Time: 15 minutes
Cook Time: 20 minutes
Total Time: 35 minutes

Ingredients:
Blueberry Muffins (Half Batch)

* 1 cup all-purpose flour
* ½ cup granulated sugar
* 1 teaspoon baking powder
* ¼ teaspoon salt (or omit if preferred)
* 1 egg
* ¼ cup butter, melted
* ¼ cup milk
* ½ teaspoon vanilla extract
* 1 cup fresh or frozen blueberries

Streusel Topping (Half Batch):

* 2 tablespoons all-purpose flour
* 1 tablespoon packed brown sugar
* 1 tablespoon granulated sugar
* ⅛ teaspoon ground cinnamon
* Pinch of salt (about 1/16 teaspoon)
* 1 tablespoon cold butter

Instructions:

1. Preheat the oven to 400°F (204°C). Line a muffin pan with cupcake liners.
2. In a large bowl, whisk together:
* 1 cup flour
* ½ cup sugar
* 1 teaspoon baking powder
* ¼ teaspoon salt (or leave it out if preferred)
3. In a medium bowl, whisk the egg until smooth. Add:
* ¼ cup melted butter
* ¼ cup milk
* ½ teaspoon vanilla
Whisk until combined.
4. Pour the wet ingredients into the dry ingredients and stir just until combined. The batter will be lumpy. Gently fold in the blueberries.
5. Make the streusel by combining:
* 2 tablespoons flour
* 1 tablespoon brown sugar
* 1 tablespoon granulated sugar
* ⅛ teaspoon cinnamon
* Pinch of salt
Cut in the cold butter with a pastry cutter or fork until the mixture is crumbly.
6. Fill the muffin cups about ⅔ to ¾ full with batter.
7. Sprinkle about ½ tablespoon of streusel over each muffin.
8. Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean with just a few crumbs attached.
9. Let the muffins cool in the pan for several minutes, then transfer them to a wire rack to cool completely.

Storage

* Store in an airtight container at room temperature for up to 4 days.
* Freeze for up to 3 months. To serve, thaw overnight at room temperature and warm in a 300°F oven for 3–5 minutes.

These muffins are especially delicious if you sprinkle a little coarse sugar on top before baking for an extra bakery-style crunch. Happy baking! 🫐🧁
