Today’s garden fix… Garden Curry Chicken Pizza, made with fresh zucchini, peppers, tomatoes, and onions from our garden. Curry chicken and sweet onion teriyaki sauce.

Big day! We had our first garden harvest today! Red potatoes, zucchini, strawberries, romaine lettuce, and peppers.
Jaxon harvested and then I taught him how to prepare it into lunch. He cooked grilled chicken, zucchini, and red potatoes over rice for his mother and I.

The kids are also knee deep in their National Parks research project. Everyone has chosen a national park to research and give a presentation on. This week they all learned how to resource quality information from various sources, take good notes, and outline their information. Most have started the rough draft process and are working towards writing their first research paper. We’ll have a capstone dinner soon where students will harvest the garden, prepare a meal for their families and present their national park project.

It’s important for students to understand where their food comes from and how to prepare it. Also very important to see the world around them. This is a fun way to introduce several different places to students and their families while enjoying a farm to fork dinner they made happen from start to finish!

The kids put a lot of work into this garden. Seeding, building garden beds, planting, managing and now harvesting. It makes me proud to see this project grow full circle, and happy to see the kids’ reactions to their efforts.

I unfortunately did not get a video of Jaxon’s first time trying zucchini. I think it’s safe to say he’s not a big fan! Haha
