The weather is finally getting warmer in MN and for me, that means being outside as much as possible ----

But, I still gotta eat.
And without spending hrs in the kitchen, prepping food

Coconut Flour Zucchini muffins

Here's a quick, easy, high protein recipe to try.

Ingredients
▢3 large eggs
▢¼ cup coconut oil melted
▢¾ cup coconut flour
▢½ cup low carb sugar substitute or 3½ tablespoon of Truvia
▢¾ teaspoon baking soda
▢¾ teaspoon baking powder
▢¼ teaspoon salt
▢1 teaspoon ground cinnamon
▢1 cup packed shredded zucchini
▢½ cup walnuts chopped
Instructions:
Combine the first 8 ingredients until well blended.
Stir in zucchini and walnuts.
Spoon batter into greased muffin cups or paper liners. (I used parchment paper liners)
Bake at 350 F for 20-25 minutes or until toothpick inserted in middle of muffin comes out clean.
Notes
Any sweetener can be used and adjusted to taste.

It's Treat Tuesday - Here's a Valentine's breakfast recipe for those you love.

Try our heartwarming overnight oats recipe – a blend of love, oats, and delightful flavours.

Prep the night before for a morning filled with romance and a healthy kick! 🌹🥣

Strawberry Shortcake Collagen Protein Overnight Oats

Ingredients:

1/2 cup rolled oats
2 scoops of Strawberry Protein Powder
2 scoops of collagen
1 cup cup unsweetened vanilla almond milk
1/2 cup frozen strawberries + fresh for serving
1/4 cup plain Greek yogurt
1 tablespoon of chia seeds
1 teaspoon maple syrup or honey
1/2 teaspoon almond extract 1/2 teaspoon pure vanilla extract

Instructions: Place all ingredients in a mason jar and stir until well combined. Place in the fridge overnight (or at least a couple hours). You’ll notice that the oats soak up a lot of the liquid so you may want to add a little more almond milk before serving. Top oats with additional chopped strawberries and toppings of choice and serve. Overnight oats will keep for up to 5 days in the fridge in a sealed container.
