What’s for Dinner Wednesday - Meatball Subs!
Ingredients:
• 1.5 lbs ground beef
• 2 eggs
• 1/4 cup Italian breadcrumbs
• Salt and pepper, to taste
• 1/2 tsp garlic powder
• 1 (24 oz) jar marinara sauce
• 6 hoagie rolls
• 6 slices mozzarella cheese
Directions:
1. Preheat oven to 425 degrees F., and spray a large baking sheet with nonstick spray.
2. In a large bowl, combine ground beef, eggs, breadcrumbs, salt, pepper and garlic powder.
3. Form into 1.5 inch meatballs (I get about 16), and place on your baking sheet. Bake for 15 minutes.
4. Meanwhile, heat sauce in a large skillet. Remove meatballs from the oven and place in the sauce. Simmer for 5-7 minutes, or until meatballs are cooked
through.
5. Turn oven to broil, and place cheese on the hoagies. Toast for about 3 minutes or until cheese is melted.
6. To plate: Place toasted bread on a plate and top with meatballs and sauce. Enjoy!

When all else fails, breakfast for dinner is my go-to meal when I do not want to cook! I put eggs, bacon and sausage on my grocery list each week and typically always have bread, tortillas, and every now and then some everything bagels. It’s quick, it’s delicious and kiddo approved.

I have the perfect side for you to make this weekend!
Watermelon, Tomato and Feta Salad 💙❤️🇺🇸
Ingredients:
• 1 medium, seedless watermelon, cubed (About 8 cups)
• 4 cups grape tomatoes, halved
• 1 large red onion, sliced thin
• 8 oz crumbled feta cheese
• 1/2 cup balsamic vinegar
• 2 tbsp fresh mint, chopped
• 1 tbsp fresh dill, chopped
• Salt and pepper, to taste
Directions:
1. In a large bowl, mix watermelon, tomatoes, onion and feta.
2. In a small bowl, mix balsamic, mint, and dill.
3. Pour balsamic mixture over the watermelon mixture and stir to combine. Season with salt and pepper, and add more balsamic and herbs, if desired.
4. Serve cold.

🍽️ What’s for Dinner Wednesday 🍽️
Slow Cooker Turkey Taco Casserole is one of those meals that takes just a few minutes to throw together and makes dinner time a breeze!
Loaded with ground turkey, beans, corn, tomatoes, and melty cheese, it’s hearty, budget-friendly, and perfect for nights when you don’t want to pay for take-out but don’t want to do much either.
Ingredients:
1 tbsp olive oil
1 lb ground turkey
Salt and pepper, to taste
1 cup chopped yellow onion
1 green bell pepper, diced
1 cup corn kernels
1 can black beans, drained and rinsed
1 can pinto beans, drained and rinsed
1 can Rotel tomatoes
1 can diced tomatoes
2 tbsp chili powder
1 tbsp cumin
1 cup shredded Monterey Jack cheese
½ cup chopped green onions
Directions:
Heat olive oil in a skillet over medium heat.
Add ground turkey and season with salt and pepper. Cook until browned.
Transfer turkey to the slow cooker.
Add onion, bell pepper, corn, black beans, pinto beans, Rotel, diced tomatoes, chili powder, and cumin. Stir to combine.
Cover and cook on LOW for 4-6 hours or HIGH for 2-3 hours.
During the last 15 minutes, sprinkle with Monterey Jack cheese and cover until melted.
Top with green onions before serving.
Serve it with tortilla chips, over rice, or just grab a bowl and a spoon. Don’t love ground turkey? Use ground chicken or ground beef!
