I made this for Easter brunch and it's so easy! Who needs a mandolin when you can use chips. I used the Boulder brand thin and crispy chips made with avocado oil.

Here's an easy gazpacho recipe. It will keep you and the kitchen cool! It all goes in the blender and is done! It has a nice zing to it. I added almonds, h**p seeds, and sprouts to top it off.

Bread. Cherry butter. That's all folks. 🤣

I have been baking my way through the Paleo Running Mama's cook book, Paleo Baking at Home. This is her sandwich bread. It's quite good. Marcus said it tastes like bread...in a surprised tone. That's a seal of approval! There's no traditional flour in this bread.

I subbed in honey since I'm out of maple syrup and bought golden flax seeds and ground in my spice grinder. Regular flax seeds may give a darker appearance.

I used nectarines instead of peaches. I prefer organic since both are on the dirty dozen list.

I used vegan feta cheese. Trader Joe's makes one as does the Follow Your Heart brand.

Gorgeous peach brussels sprouts salad with crunchy nuts and a creamy tahini poppy seed dressing. The perfect summer lunch or side dish!

Dill pickle fans unite! I made this pickle-y broccoli slaw and it's 💯. A veggie combo gives you plant diversity plus good bacteria from the pickles.

Great for summer. No mayo! I used raw sunflower seeds instead of cashews.

I made the dressing a couple days ahead and adjusted with more lemon, touch more oil, salt and pepper when I tossed with the veggies. I used fermented pickles from Grillos, not the shelf stable ones...those usually have extra unwanted stuff.

Dill pickle broccoli slaw is naturally vegan and mayo-free, ready in 30 minutes, and punched up with tangy and savory pickle flavour.

I've had this recipe clipped for years and just made it. It's a lighter spin on Mac and cheese. I used all gluten free ingredient swaps (rice pasta, GF panko, GF 1:1 flour) and dairy free swaps (almond milk, vegan cheddar, and nutritional yeast). Success! I did add more salt. Taste sauce and combo mixture before baking to adjust to your preference. I cooked the cauliflower and pasta in broth because I had it open.

Looking forward to leftovers!

This is my favorite time of the year, because I can enjoy the warmth of the kitchen. While I'm enjoying all the warmth, I can make all of my cold-weat

Why I guide people to a healthier lifestyle that they may not realize is attainable

I’ve always been interested in how food and the environment play a role in well-being. I find myself endlessly reading books, blogs, and articles on how these factors can impact your lifestyle. And using my curiosity as a reason to eat and experiment! So, take my inherent interest and throw in the year 2018. The year my mom was diagnosed in January and lost her brave battle to cancer in May. As soon as I snapped out of the shock of the diagnosis, I read everything I could about how food, the mind-body connection, spirit and relationships, and ways to modify your lifestyle that can heal. I would call her and say, I know you eat blueberries already, but EAT MORE and ditch that diet coke in favor of green tea while you are at it. Then, when I saw the “food” the hospital provided I almost lost my mind. Processed, sugar-laden, antioxidant lacking, inflammatory…the list goes on. I was and still am appalled.

In summer 2018, enter my long-time practitioner who is trained in functional medicine. During one of our sessions, she said, you would be great at coaching. She knows my snarky attitude, so I chuckled. But she was serious, and I looked into it. The more I researched, the more I realized this was a perfect fit for me. I could combine my passion for the environment, nutrition, self-care, and a healthy lifestyle with my practical skills of creating strategies to improve. But instead of organizations, I now focus on people.
