จากความสนใจที่จะเชื่อมโยงคนเข้ากับธรรมชาติ จนเป็นที่มาของโพสต์ก่อน ๆ เกี่ยวกับการเล่นอิสระในธรรมชาติในชื่อว่าธรรมชาติพาเพลิน เนื่องจากว่าเด็กในเมืองนับวันจะได้เล่นอิสระในธรรมชาติน้อยลงทุกที ๆ
อย่างไรก็ดีเราเชื่อว่าในสภาพเมือง ยังมีสิ่งหนึ่งที่เชื่อมโยงผู้คนเข้ากับธรรมชาติอยู่ทุกวัน สิ่งนั้นก็คืออาหาร
อาหารที่ในปัจจุบันมีแนวโน้มจะห่างไกลสภาพธรรมชาติดั้งเดิมออกไปเรื่อย ๆ ผ่านการแปรรูปมากมาย บางครั้ง"สิ่งที่กินได้"รอบตัวเรานั้น อาจจะให้เพียงพลังงานแต่ด้อยสารอาหาร รวมถึงมีสารปรุงแต่งเพิ่มเติมที่อาจส่งผลร้ายต่อร่างกายของเรา
เราจึงควรหันกลับมาพินิจพิจารณาอาหารกันอีกครั้ง อาหารที่แท้จริง (real food) นั้นแตกต่างจากอาหารแปรรูปสูง (ultra-processed food)
ร่างกายเรามีพลังงาน ซ่อมแซม สร้างใหม่ได้ ล้วนเป็นเพราะอาหารที่เรากินเข้าไป อาหารที่ดี ส่งผลดีต่อทั้งกายและใจ
เราเชื่อว่าอาหารที่ดี เติบโตมาจากดินที่ดี ถ้าเป็นผักก็เป็นผักที่โตในดินดี ถ้าเป็นสัตว์ก็เป็นสัตว์ที่ได้กินอาหารธรรมชาติที่โตในดินที่ดีเช่นกัน
จึงเป็นที่มาของ ดินดี มรรคกินดี (ดินดีเป็นหนทางสู่การกินดี)
Over the last year, my growing interest in reconnecting people with nature led to previous posts advocating free play in nature, especially for urban children who are increasingly having less time to play freely in nature.
I have come to realise that in urban settings, one thing connects us to nature every single day: food.
The food we consume today often drifts further and further from its natural state, with more processing and sometimes is ultra-processed. These so-called "edibles" often provide nothing more than empty energy, stripped of vital nutrients and come with additives that can harm our bodies.
This disparity compels us to re-examine our plates. There is a fundamental different between real food and ultra-processed food.
Our bodies have the energy to repair and regenerate, all thanks to the food we eat. Good food benefits both our body and mind.
The journey of good food, however, begins not in the kitchen, but at the foundation: the soil. We believe that good food comes from good soil. Good vegetables are grown in good soil, and animal products are from animals that eat natural foods grown in good soil.
Hence, the concept of "Dindee MacKindee", meaning Good Soil is the Path to Good Eating.
