This weekend picked up 2kgs Ripened Ume and decided to try out 3 variations of Umeshu:
• Takara Shochu 35% ABV with rock sugar
• Nikka Whisky From The Barrel 51% ABV with rock sugar
• Haku Vodka 40% ABV with Okinawan Black Sugar mix

And another batch of
• Umeboshi salted with Japanese Sea Salt

A friend calls it my revenge playing - from lots of prepping work for giant tray of Lasagne to cleaning 2kg of Japanese umes.

I’m not a fan of soggy bread so switched out the bread and have my take on the Croissant & Butter Pudding. Layers of croissants, Tiptree thick cut marmalade, rum-soaked raisins and a lovely vanilla custard made with eggs. Crunch time! 😄
