What I did while I'm isolated at home with Covid for the past 3 days : Croissants!

Baking croissants after almost 9 years.
I used Naturli Vegan butter block for this and using vegan butter was no different to using non-dairy butter.
The only challenge was due to the high water content, the butter kept softening up rapidly so I had to rush the lamination process to put my dough back in the fridge.
Other than this, croissants are completely possible without the need to contribute to animal cruelty!

Croissants are not difficult to make. But they are super duper time consuming!!!!! It's almost a 2-day process and I laminated and folded my Croissants less than the actual number of times I should have, which explains the lack of layers.

And halfway I decided to make some chocolate croissants by stuffing the leftover Dough with Callebaut callets. And since I'm the baker, I get to decide on the quantity of chocolate! This is one hell of a chocolatey croissant we can't find in shops!

I feel like this one deserves a main post!
When I was a kid I used to make a celery snack with cottage cheese.
Today I decided to recreate it since it will benefit my transition to Raw vegan.

And it's so quick and easy! Just some got Celery sticks and filled it up with homemade raw cashew cheese (which only consist soaked cashews, lemon juice, olive oil, and salt), sprinkled with sesame seed, coriander, and some chilli padis cause mama needs her spice!

This week, is focusing on an Indian Herb known as Vallarai Keerai or Indian Pennywort.

Ayurvedic practitioners claim that Indian Pennywort has antimicrobial, anti-inflammatory, antidiabetic, and anti-depressant properties.

"The leaves of plants have been used in Ayurvedic medicine formulations to boost memory power, heal skin diseases, promote cardiovascular and brain health."

Enjoy this medicinal herb in your delicious meal this Saturday! Served with tumeric rice made with fresh tumeric! And as usual comes with complimentary rasam and pappadams!
Ps: Even the rasam contains some of this herb!

Busy day today at Red Tomato today, I didn't think Chef Tania would be able to accommodate my special request for tofu scramble when I saw the number of guests. 
I asked Yati to help me check if tofu scramble was possible, otherwise I will  have what's on the menu.

And 15 minutes later she came out with this, and Chef Tania came out and said, "I knew it was you when I heard 'tofu scramble' " 😂 20/05/2022

Vegan Panna Cotta!

This is already available on the menu, but the Chef doesn't make it often since almost everyone orders the non-vegan version only. I didn't tell her I wanted to try it. But she had a feeling I might order it, and she made it. And I did!

Today we got to meet the chef/owner of this place, who made a customized vegan breakfast platter for us
The chef name is Tania, and even though she is not vegan, she shared she loved to experiment with vegan cooking. She makes her own in-house vegan sauces, vegan cheese and even vegan "meats" using VWG. A trait that is lacking in many so-called professional chefs I've come across who have said vegan food is not possible to make, or that it's too hard.

Today, Tania made me a vegan platter with some homemade hash brown (not frozen!), Some vegan salami, half of an avocado, sauteed mushrooms in oil and sauteed spinach in oil.

And while we wait, Tania gave us some bread and some vegan mayonnaise she whipped up within minutes, so we have something to munch on while waiting for our foods!

It was so nice to hear the backstory of Red Tomato and how it tried to survive amidst the pandemic. And true enough, during pre-pandemic, Langkawi was a very vegan friendly island due to the increased number of expats living there. But ever since the island opened up after the pandemic, the food choices for vegans have been reduced as everyone returned back home.

And then there is Tania, who said she will take care of foods for me and also told me to come back tomorrow and she will make me some tofu scramble! Omg!!!

I'm legit so moved with how everyone in this restaurant takes care of us. And due to lack of manpower, the wait time for food is long. But the wait is so Worth it!

I needed to take a picture with this beautiful staff, Yati, because since I stepped into the restaurant she has been taking care of me when I told her I was Vegan!
Even though the menu had vegan options, she kept coming out and telling me what else can be veganised, and also went the extra mile to give me vegan sauces and vegan cheese, that were not part of my meals!
She also told me to come over for breakfast the next day when I told her I struggled for vegan breakfast today, and she told me they will make me something vegan for breakfast! They don't even have vegan options in their breakfast menu! 😢❤️

Although Langkawi is semi-vegan friendly, it's still a struggle to find good restaurants that will cater to a vegan lifestyle. So naturally, I deeply appreciate a place that goes the extra mile for just one person with dietary restrictions.

This place is a place for Vegans to seek comfort for good vegan Foods!

I am so full and satisfied with my dinner today and I will be in food coma for days.
And I'm looking forward for breakfast tomorrow!!!
