What wine to pair with smoked whale? - I will confess I didn’t order this smoked whale in Nuuk, Greenland 🇬🇱. It was brought as an amuse bouche from the chef in the restaurant. I personally don’t love eating whale, but I do believe trying foods in different places is a way to explore the culture and show respect. The wine however was chosen - a nice crisp Chablis to go with the buttery halibut that followed.

Wine Wherever🍷Aalborg, Denmark edition - Even sommeliers don’t know EVERY wine. There are thousands in the world and new ones emerging every year. You simply cannot taste them all. So the learning never ends - and honestly, that’s my favourite thing about wine.

This is a Brachetto d’Acqui - a sparkling red from Piedmont, Italy. Off-dry, lightly fizzy, the most beautiful jewel ruby color. I had it with dessert last night and I was genuinely delighted to taste something I’d never tried before.

Sparkling reds are one of wine’s great surprises. Refreshing, unexpected, and most people have never tried one.

The bottle you’ve never heard of is often the one worth ordering.

Wine Wherever - Aalborg, Denmark. 🍷

The taste of summer. Pouilly Fumé and an heirloom tomato salad with smoked cheese.

Acid meets acid in the pairing of tomatoes and Sauvignon Blanc. The flint and smoke of the wine greets the lightly smoked cheese. Perfectly subtle, perfectly delicious.

Not my finest glassware moment. But a crisp Chablis, the midnight sun, and Wine From Another Galaxy by Dan Keeling for company. Would it taste better in a ZALTO Glas GMBH ? Undoubtedly. But you do what you can with what you have where you are.

Verdejo is one of Spain’s most interesting whites - grown in Rueda, it’s crisp, aromatic, slightly nutty, and perfect on a warm evening watching the sunset.
