1 tbsp grated ginger
2 tbsp light soy sauce
1/2 tsp salt
1/4 tsp pepper
1/4 cup shitake mushroom
1 egg
1/4 cup onion leeks
1/2 tbsp sesame oil

— Sauce —
(good for 15-20 dumplings)

2 tbsp light soy sauce
1 tbsp vinegar
1 tsp sugar
1/4 cup water or dumpling broth
1-2 tbsp chili oil
1 tsp sesame oil
2 cloves minced garlic
1 tbsp onion leeks
1/2 tbsp cilantro
