Have you ever wondered if what one taster calls 'bright' is 'acidic' to another? Thatโs what this infographic on Sensory Alignment explains! Here is a deeper look at what we mean.
"Sensory Alignment" is not about liking the same coffees; it's about agreeing on how to describe them.
Think of it as a calibration tool. Two people could both love a certain coffee for different reasons. Sensory alignment ensures that if one taster identifies "stone fruit" and a "creamy body," the second taster, using the same global calibration system (like the SCA protocol), should also perceive those distinct attributes and use that same language.
Without this alignment, communication across the global coffee supply chain breaks down. If a roaster orders coffee from an importer based on "juicy acidity" and the importer's "juicy" is the roaster's "sour," both parties will be disappointed.

A Standardized System: We use cupping to measure specific, repeatable attributes: Aroma, Acidity, Body, Aftertaste, and Flavor Profile.
Objective, Not Subjective: Mastering this language moves you beyond simple "I like this" opinions towards objective descriptive assessments ("This has a light body with medium citrus acidity").
