Pork Adobo with Coke
Ingredients
* 1 kg Pork belly (cut into 1 to 2 inch cubes)
* 4 clove Garlic (crushed)
* 1 red Onion (chopped)
* 0.25 cup Soy sauce
* 0.5 cup Vinegar (cane or coconut)
* 1.5 cup Coke drinks (soda drinks)
* 2 tsp Peppercorn (crack or whole)
* 3 dried Bay leaves (laurel)
* Salt to taste
* Water as needed
Instructions
1. Cut the pork meat into cubes 1 to 2 inches in size.
2. Peel and crush the garlic and chop the onion.
3. Heat the pan over a medium flame. Add the pork and sear until it turns a light brown and its fat starts rendering.
4. Push the pork into the pan on one side.
5. Then add the garlic and sauté until light brown and aromatic then add the onion and sauté for 30 seconds.
6. Combine the pork and spices, then add the soy sauce and stir.
7. Add dried bay leaves and whole peppercorns. Stir.
8. Add the vinegar, let it come to a boil, and cook for 3 minutes without stirring.
9. Add the Coke drinks and bring to a boil.
10. Adjust the heat to medium-low and simmer until the meat is tender.
11. Adjust the taste if necessary. If the taste is too sweet, add salt to balance it out.
12. Simmer again until the sauce reaches the desired consistency.
13. Turn off the heat, and then transfer to a serving plate.
14. Serve hot with a plate of steaming rice. Enjoy!
