Cleaning Our Chocolate Workhorse 🍫

Cleaned, prepped, and ready for the next batches of chocolate.

We don’t wash the melanger after every batch. As long as we’re producing continuously and each melanger is dedicated to the same chocolate variety. A full wash is only needed after production has been paused for more than a week.

The melanger is one of the most important machines in bean-to-bar chocolate making. It’s what transforms ground cacao into the smooth, silky chocolate we all love.
