🍫🥞 Chocolate Pancakes & Sundae – Pure Indulgence on a Plate! 🤤✨
Fluffy, rich chocolate pancakes layered with creamy ice cream, drizzled in glossy fudge sauce, and topped with whipped cream & cherries 🍒🍨

🌟 Ingredients

🥞 Chocolate Pancakes:

• 1 cup (125g) all-purpose flour
• ¼ cup (25g) cocoa powder
• 2 tbsp sugar
• 1 tsp baking powder
• ½ tsp baking soda
• Pinch of salt
• 1 cup (240ml) milk
• 1 large egg 🥚
• 2 tbsp melted butter or oil
• 1 tsp vanilla extract
• ½ cup chocolate chips (optional 😍)



🍨 For the Sundae:

• Vanilla or chocolate ice cream
• Hot fudge or chocolate sauce 🍫
• Whipped cream
• Cherries 🍒
• Chocolate shavings or sprinkles (optional)



👩‍🍳 Instructions

1️⃣ Make the Pancakes:
• In a bowl, mix flour, cocoa, sugar, baking powder, baking soda, and salt.
• In another bowl, whisk together milk, egg, butter, and vanilla.
• Combine the wet and dry ingredients until just mixed (don't overmix!).
• Fold in chocolate chips.
• Cook on a greased pan over medium heat until bubbles form, then flip.



2️⃣ Build the Sundae Stack:
• Stack warm chocolate pancakes on a plate.

Shrimp Avocado Toast 🍤🥑🍞

Ingredients:

1 slice of thick bread, toasted

½ ripe avocado, mashed

1 egg, scrambled

5–6 cooked shrimp

½ tsp olive oil or butter

Salt and black pepper, to taste

Chili flakes (optional, for heat)

Instructions:

1. Toast your bread until golden and crispy.

2. Mash the avocado with a pinch of salt and spread it over the toast.

3. Scramble the egg softly and layer it on top of the avocado.

4. Sauté the shrimp briefly with olive oil, salt, and pepper, then place them over the eggs.

5. Sprinkle chili flakes and enjoy with fresh grapes, blueberries, and an iced latte on the side. ☕💚

15–20 minutes

🍽️ Serves:

4–6 people

🥭 Ingredients:

1 cup custard (vanilla flavor or your choice) 🍮

1 banana, sliced 🍌

1 orange, peeled and segmented 🍊

6–8 strawberries, halved 🍓

½ cup green grapes 🍇

A few mint leaves for garnish 🌿

Prepare the custard

Dark Spiced English Fruit Cake

Ingredients
• 2 cups (250g) all-purpose flour
• 1 tsp baking powder
• 1 tsp cinnamon powder
• ½ tsp nutmeg powder
• ½ tsp mixed spice or allspice
• ¼ tsp ground cloves
• ½ tsp salt
• 1 cup (227g) unsalted butter, softened
• 1 cup (200g) brown sugar
• 4 large eggs
• 2 tbsp molasses or black treacle
• 1 tsp vanilla extract
• 2 tbsp orange zest
• ¼ cup (60ml) orange juice
• 2 cups (300g) mixed dried fruits (raisins, sultanas, currants, chopped dates, and cherries)
• 2 tbsp all-purpose flour (for tossing fruits)

Instructions
• Preheat oven to 160°C (320°F). Grease and line an 8-inch round pan with parchment paper.
• In a bowl, combine flour, baking powder, spices, and salt. Set aside.
• In another bowl, cream butter and brown sugar until light and fluffy.
• Add eggs one at a time, beating well after each.
• Mix in molasses, vanilla, orange zest, and juice.
• Toss the dried fruits with 2 tablespoons of flour to prevent them from sinking.
• Fold the dry ingredients gently into the wet mixture.
• Add the coated fruits and stir just until evenly combined.
• Pour batter into the prepared pan and smooth the top.
• Bake for 1 hour 10 minutes to 1 hour 20 minutes, or until a skewer inserted in the center comes out clean.
• Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Tips:
• For a richer flavor, soak the fruits overnight in rum, brandy, or orange juice before baking.
• Brush the top with a little brandy or syrup while warm to keep it moist.
• Store wrapped in foil or in an airtight tin — it tastes even better after 1–2 days.
