A little throwback… ❤️🧀

A few years ago, I had the pleasure of teaching live vegan cheese workshops at . Seeing people discover that they could create beautiful, delicious plant-based cheese from scratch was incredibly rewarding.

Looking back at this video reminds me how much of my journey has been dedicated to understanding, experimenting with, and sharing the art of vegan cheese.

These days, my focus is on crafting Honest Sheese bringing everything I’ve learned over the years into every wheel of cheese I make.

But watching this also made me wonder…

There was a time when this place had a very different reputation.

Long before Tjuvholmen became one of Oslo’s most beautiful waterfront neighborhoods, it was a small islet outside the city. Its name literally means “Thief Islet,” and according to local history, it was where criminals were once taken to be punished, a stark contrast to the peaceful place it is today.

Today, the bridge connecting Tjuvholmen and Aker Brygge offers one of my favourite views in Oslo. Modern architecture rises from the water, boats drift quietly through the canal, and public art blends naturally into everyday life. It’s the kind of place that invites you to slow down.

Maybe that’s what I love most about it.

A place once defined by its past has become a place where people come to walk, pause, and simply enjoy the moment.

That’s a beautiful reminder that places like people can evolve.

And perhaps that’s why Honest Sheese feels so at home here.

Not because it’s about cheese.

But because it’s about slowing down long enough to notice where you are.
