First save this post 🤭 as I recall how this recipe was born,

During the one of the editions of PEDS challenge, a mum wanted to try making cookies but was not sure what to combine.

So I asked her “what do you have at home?” she listed some of these ingredients and BOOM! I created a recipe.

The following day an amazing mum shot a video for us in the challenge on how she modified the original recipe.

Ladies and gentlemen, that was how rice cookies was born😂 and it is still a hit back to back!

This recipe has fiber, amino acids (all the essential ones o), healthy fats, (DHA included), calcium, iron and Vitamins.

Moral of the story- You can use what you have to feed your child a nutritious snack or meal. No need looking for what is not lost outside 🏃🏽‍♀️🏃🏽‍♀️🏃🏽‍♀️

Are you shocked like me? I didn’t even know what made me read the label but here we are 😟.

So let’s clear up some things I found out about Canadian salt.

In Canada, table salt is required to have 0.01% potassium iodide added. This is done to prevent iodine deficiency and diseases like goiter.

The shocking part is the addition of dextrose or salt. It’s not for sweetness; instead it helps stabilize the iodine so it doesn’t degrade. Sea salt on the other hand, is harvested from evaporated ocean water. It does retain trace minerals and might include small amounts of iodine, but not enough to meet your daily needs reliably, that’s why in my video you can still sugar and potassium iodide being added.

For Kosher salt, it usually doesn’t include iodine. It can have anti‐caking agents just like table salt and from my experience, it tastes “saltier” based on texture and size of the crystals.

Pickling salt is in the name. it is used primarily for pickling foods not for cooking. So let’s not bother about its nutrition properties.

Half salt and salt free? These are salts mixed with reduced sodium or sodium-substitutes for those trying to lower sodium intake. If you see this and do not know anything about your eletrolytes, please don’t take them.

Some are made with potassium chloride or magenisum chloride where too much of any of these minerals can cause deficiency or even kidney issues.

And most importantly, DO NOT GIVE IT TO CHILDREN !! 🛑

What hit me is: most of us buy these salts without thinking 🤔 and yet the differences matter. Especially if you’re in countries like the U.S. or Nigeria where food labeling may be less clear or enforcement weaker.

This is exactly why I keep saying: Join the Peds nutrition Challenge. It is not just because I want you to but because my expertise is deep, and I pour all of that into the courses, which gets updated when there is new information.

So tell me, did you know this and what do you think of brands that do use sugar but don’t list it on the labels?

Honestly we need to start talking more about the overwhelm of being a health professional.

I almost cried two weeks ago applying for a grant that was shut down even after re-appeal.

Now the grant wasn’t why I almost cried.

I almost cried because I was reading the 2023 and 2022 report from the College of Dietitians Alberta.

According to the annual reports, In 2022, out of 121 registered applicants, 37 relocated out of the province, 10 exited the field of dietetics, and 31 retired, resulting in a departure rate of approximately 64.5%. The statistics for 2023 are equally concerning: of 92 approved applications, 29 left the province, 11 discontinued their dietetic careers, and 23 retired, resulting in a 68.5% departure rate amidst a decrease in applications received.

The situation is even more dire for international applicants. Out of 15 international applicants in the 2022/2023 cohort, only 4 were approved, illustrating a crisis exacerbated by the current regulations and emphasizing the urgent need for regulatory reform.

I was part of the 2024 cohort and I can bet you the data is no different. Especially with the decision I received that lead me on a totally different licensure path (Thank goodness one exists).

I have plans of following up on this and sharing my concerns with the Fairness for Newcomers Office as a reform is long overdue.

There are internationally trained and well qualified Nutritionist amd Dietitians being drowned with debt to get degrees that are too long and should be fast tracked.

Albertans deserve nutritionists/dietitians who are ready to work and support the health care team!

Chisom once told me, “Ify, this boy is stressing me. You helped his sister, but his own is too much!”

I laughed until malaria blood work came back with iron levels almost non-existent.
The Advice Everyone Gave Her?
“It’s just a phase.”
But phases don’t last for months while your child’s body is quietly screaming for help.

Here’s What I Told Her
There are signs you should never ignore, because when you catch them early, you save your child months (even years) of unnecessary struggle.

The Scale Isn’t Moving
When weight stalls or drops for 3+ months and your child isn’t actively trying to lose weight, something is off. This isn’t “growing slowly.” It’s a red flag.

The Never-Ending Sick Cycle
If hospital visits are every eke market day, with constant colds, fever, infection then it might mean nutrient deficiencies.

When “Picky Eating” Crosses the Line
Fewer than 10 foods. Gagging or vomiting at new textures. This is not stubbornness, it could be ARFID.

The Mealtime Meltdown
Screaming, crying, panic at the sight of food can point to sensory issues or even FPIES, a delayed food allergy.

The Always-Tired Child
Too much energy, struggling in school, irritability after meals? Seems small but that child could be missing good protein, or healthy fats.

Thank God for Chisom o! because her 2 year olds story could have been very different.

Your Child’s Body Whispers Before It Screams
Don’t wait for “it’s just a phase” to turn into a hospital admission.
Listen now, act fast and if you need help, I am that pediatric nutritionist who can show you exactly what to do next.
