What if the future of sustainable food is already hiding in our traditional fermentation practices?

For centuries, people have used fermentation to preserve food, improve its value, and make use of locally available resources.

But today, we can ask a bigger question:

How can science make fermentation more sustainable?
Less water.
Less energy.
Less waste.
Better use of agricultural by-products.
Safer and more consistent processes.
More income for small-scale producers.

Fermentation isn't just about making food.
It could be part of building a more sustainable food system.
What should science change first?

Science can bridge tradition and innovation.

By understanding the microbes, improving methods, and developing practical solutions, we can make traditional fermented foods cheaper, safer, and more sustainable, while preserving the knowledge that has nourished communities for generations.

This is the work FASH is committed to.

BEHIND EVERY BOWL OF AKAMU/OGI IS A PROCESS.

We often see the food.
We don't always see the work, knowledge and processes behind it.

From maize selection and milling to soaking and fermentation, every step matters.

FASH is interested in what happens behind the food we eat, and how science can help make these processes safer, better and more sustainable. 🌱

What they taught us. ❤️

At our first FASH community outreach, we went to share knowledge about fermentation, food safety and microorganisms, but we also went to listen and learn.

Mrs Stella Nwoke shared that they enjoyed the session and would like us to come again.

We heard you, Stella. We will come again. 🌱

What would happen if fermentation disappeared?

No microbes

No fermentation

None of your favorite foods!

Which food will you miss the most? 😢

Meet the tiny workers behind fermentation. 🧫🌱

Fermentation is powered by microscopic living organisms that we cannot see with our eyes.

Yeasts, bacteria, and some fungi transform the materials around them, creating the unique flavours, aromas, textures, and characteristics we find in fermented foods and products.

Though they are tiny, their activities have a huge impact on the world around us.

Every fermented food carries a story of these invisible workers and the changes they create.

At FASH, we explore and share the fascinating world of fermentation and the microorganisms that make it possible.

Fermentation is more than food.
It is science.
It is tradition.
It is livelihoods.
It is food safety.
It is innovation.
And, when done safely and sustainably, it can be part of solutions for healthier people and stronger communities.
This is the conversation FASH is starting.

What is Fermentation? 🌱

Fermentation is a biological process in which microorganisms transform organic materials.

Through controlled fermentation, bacteria, yeasts and fungi transform substances and produce new, more valuable compounds from the materials around them.

This happens in food, agriculture, biotechnology, industry, environmental processes and much more.

It is an ancient process, but its possibilities are very modern.

So, what exactly happens during fermentation?

Let's explore it together.
