Por un año volví a ser estudiante. Esta semana estoy terminando el Diplomado de Especialización en Cultura y Gastronomía Mexicana en 🇲🇽. Fue un año bien chingón de cocinar, compartir y reflexionar sobre la cocina de nuestro país. El maestro es un GRAN instructor (aparte de un tipazo) y las clases teóricas y recorridos con y .salgad0 son súper interesantes e inspiradores. Never stop learning, banda. Aprender es de las cosas más bellas que podemos hacer con nuestro tiempo. Termino con el corazón contento, la panza bien llena y la mente llena de ideas. Ahora, a prepararse para cambios muy perrones y nuevos proyectos que vienen. 🫶🏼✨

Cornish pasties, European abuelito of Pastes de Hidalgo, are so uptight they are regulated by the UK government to protect the recipe from drastic changes. They MUST be made in the region of Cornwall or they can not take the name. Mexican Pastes, on the other hand, in a true Mexican spirit, have a vast array of fillings ranging all the way from Mole to Rajas to Rice Pudding and everything sweet or savory in between. Every baker has a different recipe for the dough, you can find them in Hidalgo but are becoming way more popular in the entire country, getting even more diverse and fun renditions. There’s a very particular joy to deep frying stuff. The hot oil dramatically changing the food composition and turning it rapidly into a flaky cloud of contrasting textures… I’d dare to say it somehow makes you feel empowered.
