🍷【Exploring Douro River Terroir】Lectured by the winemaker himself! A Taste Journey Through Portugal

Freddy and Maria, winemakers from Quinta do Cume in Portugal‘s renowned Douro region, hosted a workshop for our wine tasting club members from 3:30 PM to 5:00 PM on Saturday, September 20th. The workshop also included a tasting of six selected wines from the winery. 🍷

1️⃣ Up-Close Interaction with a Renowned Winemaker
Freddy and Maria, Chief Winemakers of Quinta do Cume, a representative winery in Portugal’s Douro region, were on hand to reveal the century-old winemaking philosophy of the winery.

2️⃣ In-Depth Terroir Analysis
Through a map of the region, soil samples, and climate data, this workshop showcases how the Douro Valley‘s unique slate soils and microclimates shape wine styles.

3️⃣ Six Selected Vertical Tastings
From fresh and vibrant fruity dry whites to rich, mature Ports, experience the full spectrum of Douro wine styles.

4️⃣ Professional tasting skills training
The ”5S“ standard process for wine appreciation: observing color, swirling the glass, smelling, tasting, and savoring. Master the professional vocabulary for describing flavor.

• Challenges and innovations in winemaking on the steep slopes of the Douro River
• The integration of traditional stone trough grape treading and modern techniques
• The secrets of port wine fortification

Today, our wine club organized students to participate in the Wynn China Wine Competition Master Class Series - ”The Science Behind Wine“ activity. It was definitely a dual feast of taste buds and knowledge!

🍷The final tutorial for this semester was on NOV 29

Each tutorial will have a different theme and this time it is: “Exploring relaxing and joyful wine styles - a French rose wine, a Moscato sweet white, an Italian Prosecco sparkling wine and a Spanish sweet sparkling wine”.
We are happy that the participants can learn about the knowledge of the wine and enjoy the wine.

IFTM Wine Appreciation Club, invited Mr. Just Wong, Executive Director - Beverage Operations of Wynn Macau and Wynn Palace to deliver a sommelier masterclass for 30 students on February 19.

We are very pleased to welcome Mr. Just Wong, Executive Director of Beverage operations,Wynn Resorts.

After graduating from Montreux University of Hospitality Business Administration in Switzerland, he returned to Macao to engage in the hotel industry. Soon after, he was exposed to the wine industry by a chance, which aroused his great interest, and he began to enroll in wine tasting courses, focusing on the development of the wine tasting industry. In 2015, Just Wong was named one of the ”Top Ten Sommeliers in Macau“, and has made great contributions to the wine industry and sommelier service in Macau.
