The Power of Honesty: A Remarkable Guest
At Vino Bosco, one of our most memorable guests is Mr. Shin (pseudonym), the CEO of a financial firm in Yeouido. He consistently provides honest feedback about our restaurant, and what stands out is that his honesty never feels uncomfortable.
Many guests, whether they have a positive or less favorable impression, tend to be cautious when giving feedback. However, Mr. Shin always shares his sincere thoughts, demonstrating honesty with respect for others. Itโ€™s not easy to offer honest advice without offending, but he does it effortlessly.

"Whatโ€™s your favorite food?"
Without a moment's hesitation, I would say it's Neapolitan-style Margherita pizza.
Whether I don't have an appetite, I'm feeling down, my body is exhausted, or I have a good wine on hand, I get energy from eating Margherita pizza.
While I worked at an authentic Italian restaurant in Ginza, Japan, I ate Neapolitan-style pizza almost every day.
I discovered Neapolitan pizza at that restaurant and was immediately hooked.
I worked there for three years, and during that time, I ate Neapolitan pizza on about 300 days a year, and of those, about 200 were Margherita pizzas.
"That's an unbelievable amount, right?
For some reason, I never got tired of it, no matter how much I ate.
Then one day, a Roman-style pizzeria opened just 100 meters away from the restaurant where I worked!
The first time I tried Roman-style pizza, it felt completely different from Neapolitan pizza because the dough was entirely flat and very thin.
In my personal opinion, the downside of Neapolitan pizza is that the crust around the edges is thick, and since there's no sauce on it, the taste can be bland.
However, the Roman-style pizza dough, which is rolled out thinly with a rolling pin, has sauce spread all over it, and it was delicious. It felt like an easy wine snack or even a light treat.
"At my restaurant, Vino Bosco, we offer Roman-style Margherita pizza. The photo of todayโ€™s staff meal is of that pizza.
Since my restaurant is a wine dining establishment, I thought it would be perfect as a snack or light meal, so I added it to the menu.
We hand-make the dough and let it ferment at a low temperature for 24 hours. When an order comes in, we roll it out thin with a rolling pin, first cooking one side in a frying pan and then baking the other side in the oven. This method makes the crust perfectly crispy."
