*Egg Biryani*

*1. Ingredients* 🛒
*For rice:*
- 2 cups basmati rice, soaked 30 min 🍚
- 4 cups water 💧
- 1 bay leaf 🌿 + 4 cloves + 2 cardamom + 1 cinnamon stick
- 1 tsp salt 🧂 + 1/2 tsp oil

*For spiced eggs + masala:*
- 6 eggs, boiled + peeled 🥚 - make 2-3 slits on each egg
- 2 onions, thinly sliced 🧅 - fry till crispy "birista"
- 2 tomatoes, chopped 🍅
- 1/2 cup yogurt/yaourt 🥛
- 1 tbsp ginger-garlic paste 🧄
- 2 green chilies, slit 🌶️
- 1/2 tsp turmeric 🟡 + 1 tsp red chili powder 🌶️
- 2 tsp biryani masala/garam masala
- 1/2 tsp cumin powder + 1/2 tsp coriander powder
- 4 tbsp oil/ghee 🛢️
- Handful mint + coriander/dhania, chopped 🌿
- Fried onions + saffron milk 2 tbsp milk + pinch saffron for color ✨

*2. Steps* 👩‍🍳

*Step 1: Prep eggs + rice* 🥚🍚
1. Boil eggs 10 min for hard yolk. Peel + make 2-3 slits. Fry eggs 1 min in oil + pinch turmeric + salt. Set aside. This stops eggs from breaking in biryani.
2. Boil water with whole spices 🌿 + salt. Add drained rice. Cook 70% only - 5-6 min. Grains should still have a bite. Drain.

*Step 2: Make the masala* 🔥
1. Heat oil/ghee. Fry onions 🧅 till golden brown + crispy. Remove half for garnish - this is "birista" and it's key!
2. In same oil, add ginger-garlic 🧄 + green chilies. Cook 30 sec.
3. Add tomatoes 🍅 + all powder spices. Cook till oil separates.
4. Add yogurt 🥛 + mint + coriander 🌿. Cook 2 min. This is your biryani masala base.

*Step 3: Layer + Dum cook* 🍲
1. In heavy pot: spread half the masala. Place fried eggs 🥚 on top.
2. Add half the 70% cooked rice. Sprinkle birista + mint + coriander + saffron milk.
3. Repeat: remaining masala + rice + birista on top.
4. Seal pot with foil/lid. Cook on LOW heat 🔽 "dum" for 20-25 min. The steam finishes cooking rice + flavors marry.

*Pan- fried chicken liver with roasted potatoes and broccoli*

*1. Crispy Roasted Potatoes 🥔✨*
*Ingredients:*
- 4 medium potatoes, peeled & diced 🥔
- 2 tbsp oil 🛢️
- 1 tsp salt 🧂
- ½ tsp black pepper 🌶️
- ½ tsp paprika 🌶️

*Steps:*
1. Boil potatoes 5-6 min until half cooked 💧
2. Toss with oil, salt, pepper, paprika 🥄
3. Roast/air fry at 200°C for 20-25 min until golden & crispy 🔥

*2. Spicy Chicken Liver Stew 🍗🍅*
*Ingredients:*
- 400g chicken liver, cleaned 🍗
- 1 tbsp lemon juice 🍋
- 1 tsp salt 🧂
- ½ tsp black pepper 🌶️
- 1 tbsp oil 🛢️
- 1 small onion, chopped 🧅
- 1 tomato, chopped 🍅
- 1 green bell pepper, diced 🫑
- 1 tsp garlic & ginger paste 🧄🫚
- 1 tsp curry powder 🍛
- ½ tsp paprika 🌶️
- Fresh coriander 🌿

*Steps:*
1. Soak liver in lemon water 5 min, rinse & pat dry 💦
2. Season with salt & pepper 🧂
3. Sear liver on high heat 2-3 min per side, set aside 🔥
4. Sauté onion, garlic-ginger, then add tomato, bell pepper & spices 🍳
5. Add liver back, toss 2-3 min. Garnish with coriander 🌿

*🍗 Golden Rice with Grilled Chicken*

Ingredients (serves 4):
- 3 cups long‑grain rice (washed and soaked)
- 2 large chicken pieces (drumsticks or thighs)
- 1 onion (chopped)
- 2 cloves garlic (minced)
- 1 cup diced vegetables (carrots, red + green bell peppers)
- 2 tbsp tomato paste
- 1 tsp curry powder
- ½ tsp turmeric (for golden color)
- 1 tsp paprika or chili powder (optional, for heat)
- 3 tbsp vegetable oil
- 4 cups chicken stock or water
- Fresh herbs (chives or green onions) for garnish
- Salt & pepper to taste

Steps

1. Prepare the chicken
- Season with garlic, curry, paprika, salt, and pepper.
- Grill or oven‑roast until crispy outside and juicy inside.

2. Cook the rice
- Heat oil in a pot, sauté onion + garlic.
- Add tomato paste, curry, turmeric, and stir until fragrant.
- Pour in rice + chicken stock, season with salt.
- Cover and cook on low heat until rice is fluffy.

3. Add vegetables
- Stir in diced carrots and bell peppers just before rice finishes cooking.
- Let steam together for 5 minutes.

4. Plate & serve
- Place rice in a serving dish.
- Top with grilled chicken.
- Garnish with fresh herbs.
