*Egg Biryani*
*1. Ingredients* 🛒
*For rice:*
- 2 cups basmati rice, soaked 30 min 🍚
- 4 cups water 💧
- 1 bay leaf 🌿 + 4 cloves + 2 cardamom + 1 cinnamon stick
- 1 tsp salt 🧂 + 1/2 tsp oil
*For spiced eggs + masala:*
- 6 eggs, boiled + peeled 🥚 - make 2-3 slits on each egg
- 2 onions, thinly sliced 🧅 - fry till crispy "birista"
- 2 tomatoes, chopped 🍅
- 1/2 cup yogurt/yaourt 🥛
- 1 tbsp ginger-garlic paste 🧄
- 2 green chilies, slit 🌶️
- 1/2 tsp turmeric 🟡 + 1 tsp red chili powder 🌶️
- 2 tsp biryani masala/garam masala
- 1/2 tsp cumin powder + 1/2 tsp coriander powder
- 4 tbsp oil/ghee 🛢️
- Handful mint + coriander/dhania, chopped 🌿
- Fried onions + saffron milk 2 tbsp milk + pinch saffron for color ✨
*2. Steps* 👩🍳
*Step 1: Prep eggs + rice* 🥚🍚
1. Boil eggs 10 min for hard yolk. Peel + make 2-3 slits. Fry eggs 1 min in oil + pinch turmeric + salt. Set aside. This stops eggs from breaking in biryani.
2. Boil water with whole spices 🌿 + salt. Add drained rice. Cook 70% only - 5-6 min. Grains should still have a bite. Drain.
*Step 2: Make the masala* 🔥
1. Heat oil/ghee. Fry onions 🧅 till golden brown + crispy. Remove half for garnish - this is "birista" and it's key!
2. In same oil, add ginger-garlic 🧄 + green chilies. Cook 30 sec.
3. Add tomatoes 🍅 + all powder spices. Cook till oil separates.
4. Add yogurt 🥛 + mint + coriander 🌿. Cook 2 min. This is your biryani masala base.
*Step 3: Layer + Dum cook* 🍲
1. In heavy pot: spread half the masala. Place fried eggs 🥚 on top.
2. Add half the 70% cooked rice. Sprinkle birista + mint + coriander + saffron milk.
3. Repeat: remaining masala + rice + birista on top.
4. Seal pot with foil/lid. Cook on LOW heat 🔽 "dum" for 20-25 min. The steam finishes cooking rice + flavors marry.
