Restaurant service. The test project consists a series of modules which competitors rotate between over four days. They must work in a casual dining setting, a fine dining setting, and a banqueting setting. They must prepare for and be hands on in bar and barista lounge, and at a stand up meal reception. These activities test competitors gastronomic, bistronomic, and baquetting skills based on the specifications they're given. They much be familiar with all the products available, and perform tasks such as setting a gourmet table, folding napkins and setting the table with table cloths. They must prepare and serve dishes such as soups, tartare, classic salad, decant and aerate different wines, prepare charcuterie and smoked fish, carve and flambe fish, meats and deserts. Assessment is both wide and deep, covering product knowledge, technical skills and customer facing skills.
