We’ve had some chilly days even in the cherry blossom season, and also Asian dust and more pollen allergy in Tokyo. But finally the weather is perfect for traveling!

I just want you to know that many shops and restaurants are closed on January 1st, even the department stores in big cities like Ginza or Shinjuku. Smaller shops may be closing till the 3rd. Convenience stores are open. I see some people are feeling sick (the flu is going around badly) so you might want to get some medication at the pharmacy or drugstore in advance if you’re not feeling well now.

Very special and unique experience of Tea Ceremony in a real tea field in Saga.
I haven’t experienced this but seems very nice if you’re interested in Japanese Tea.
Saga is in Kyushu island, the southern part of Japan. Since I’m originally from Nagasaki where is located next to Saga, I’ve been there a lot of times. They have great Onsens( my favorite is Ureshino Onsen, the onsen water there is smooth as silk or thick beauty essence!), high quality Saga beef, Tofu hot pot, the most fresh clear squid sashimi in Yobuko city (I don’t usually eat squid sashimi but there!) and Ureshino tea, of course. There are many pottery studios in Arita city, and the ceramic fair is held in May, which is one of the most famous and biggest in Japan. Going there used to be our family annual event when I was little.
If you have done all the things in big cities, maybe you want to try something new in smaller towns next time you come back. (Let me add that transportation in the town is not convenient as in Tokyo…)

Let me introduce these lovely guests from the Netherlands 🇳🇱 My hometown, Nagasaki has had a strong relationship with their country since the Edo period, so I always have a sense of closeness to the Netherlands. So glad they came and it was such a great opportunity to hear about the country.
We made ramen and gyoza in a class. They enjoyed the Japanese UMAMI in the ramen soup. We went to the local grocery store after the class to pick up some snacks and chocolates for their family back home☺️. Thank you very much for coming!

I was so happy to welcome them from Canada 🍁 🇨🇦 . They have stayed in Japan for six weeks and traveled all over Japan, I mean ALL OVER! They even visited a small city near my hometown in Kyushu, enjoyed the castle and its atmosphere….meanwhile there were no tourists. They sure did have adventures during their stay. I wish I could travel like them someday.
They took my Onigiri and Tonjiru class, and we also made Tamagoyaki (Japanese rolled omelette) and easy microwave tofu. Making Tamagoyaki is difficult but it turned out very well! I hope they will have a chance to make them again back home.
And what a surprise, I got a gift from them. When I imagined that they prepared those gifts all the way from Canada for someone they’d never seen, I was moved, felt very peaceful. Traveling is also getting to know people. Again, I want to travel like them. I am very lucky to do this job. Thank you everyone.

This is what I do when I have leftover gyoza wrappers in the fridge. Crispy fried 🥟! This is a good appetizer and easy to make! I always put a tiny piece of cheese and bacon(or ham) inside, water the edge around, and close. Don’t need to make layers like we did in a class, but make sure it’s closed ( I use a folk to press a little). Deep fry them for a minute or so, turn over and wait till they’re golden brown. I said deep fry but you don’t need a lot of oil because they’re thin. Be careful when frying, cheese may come out and pop.
The fillings can be anything unless they are not watery. How about shrimp and black peppers fried gyoza, squeeze lemon when you eat…sounds tasty but make sure they are well cooked when using raw ingredients. I have leftover taco meat in the freezer, so maybe I’ll try that with cheese next time.

Every time I show my sisters the photos of my cooking class, they say the guests seem to be very nice people. Yes, it appears even in the photos. Of course they said so this time again.
I had a lovely family guests from the USA 🇺🇸. They truly care what they eat and enjoy cooking. They really cook!(Do you know what I mean?) I wish we had more time so I could ask them about their diet at home! Thank you for coming to my ramen and gyoza class!
