Насправді італійці тосканців завжди жартівливо називали mangiafoglie — тими, хто їсть рослинну їжу, хто буквально «їсть листя». Це прізвисько — не від багатого життя, а від неможливості обирати м'ясо як більш цінний продукт. Але тому і рослинна їжа в Тоскані — це чи не найкомфортніші страви з усіх узагалі рослинних. Лише один паппа аль помодоро чого вартий!
Але до стейку. Долина річки Арно, на якій стоїть Флоренція, ще з часів етрусків та римлян відома домашньою худобою. Але стейк як окрема страва з'явився десь у XVI сторіччі. Щороку 10 серпня, у день Святого Лоренцо — покровителя кухарів і лихварів, до Флоренції приїжджали купці та мандрівники з усієї Європи.
На площі Сан-Лоренцо тодішні володарі Тоскани з родини Медичі влаштовували народне частування — смажили великі шматки яловичини на решітках і роздавали городянам. За легендою, присутні на площі англійці, спіймавши ці прекрасні обсмажені шматки найкращої яловичини Європи, із задоволенням вигукували «beef stake!». Флорентійці перетворили це на «bistecca».
Справжню bistecca alla fiorentina готують виключно з м'яса породи корів chianina — білосніжних гігантських биків, яких розводять у Тоскані вже понад 2 тисячі років. Через розмір тварин той шматок туші, що йде на стейк, t-bone, становить 4–6 сантиметрів завтовшки і важить 1–1.5 кілограма.
Дуже цінують італійці, тосканці і флорентійці, що bistecca ні в чому не маринується. Фінальний продукт — це завжди союз вогню (вугілля — заради карамелізованої скоринки ззовні, і al sangue, з кров'ю — усередині) і м'яса найкращої якості. Сіль — лише після вогню. А ще свіжомелений чорний перець і кілька крапель тосканської оливкової олії.
Нарешті, флорентійський стейк замовляють не на одну людину, а завжди розділяють з друзями. М'ясо зазвичай нарізають, а кістку із залишками завжди залишають окремо — для таких, як я, любителів обглодати.

This post is for those who one day plan to find themselves in Tuscany to eat the legendary Florentine steak — bistecca alla fiorentina.
In fact, Italians have always jokingly called Tuscans mangiafoglie — plant-based food eaters, literally “leaf eaters.” This nickname didn’t come from a rich life, but from the inability to choose meat as the more valuable product. That’s why plant-based dishes in Tuscany are perhaps the most comforting of all vegetable-based cuisines. Just one pappa al pomodoro is worth it!
But back to the steak. The Arno River valley, where Florence stands, has been known for its cattle since the times of the Etruscans and Romans. But as a separate dish, steak appeared sometime in the 16th century. Every year on August 10, the feast day of Saint Lawrence — the patron of cooks and traders, merchants and travellers from all over Europe would come to Florence.
On Piazza San Lorenzo, the Medici family, then rulers of Tuscany, held public feasts — grilling large cuts of beef and giving them out to the townspeople. Legend says, the English present in the square, tasting these beautifully grilled pieces of Europe’s finest beef, joyfully exclaimed “beef steak!” The Florentines turned this into “bistecca.”
A true bistecca alla fiorentina is made exclusively from the meat of the Chianina breed — snow-white giant cattle that have been bred in Tuscany for over 2,000 years. Due to the animals’ size, the t-bone cut used for the steak is 4–6 cm thick and weighs between 1 and 1.5 kilograms.
Italians, Tuscans, and Florentines highly value that bistecca is never marinated. The final product is always the union of fire (charcoal — for the caramelized crust outside, and al sangue — rare, with blood — inside) and the highest-quality meat. Salt is added only after cooking, along with freshly ground black pepper and a few drops of Tuscan olive oil.
Finally, a Florentine steak is never ordered for one person, but always shared with friends. The meat is usually sliced, and the bone with the remaining bits is always left aside — for people like me, who love to gnaw on it.
