Ingredients

225 gm semi sweet chocolate
12tbs butter
1 1/4cup sugar
2 eggs
2 tsp vanilla extract
3/4 cup all purpose flour
1/4 cocoa powder
Pinch of salt
1/2 cup choclate chunks(sweet/semi sweet)

1.Melt the butter with chocolate in double boiler method or microwave.
2. Beat the eggs with sugar and vanilla extract.
3. Add in the dry and wet ingredients..
4. Add the chocolate chunks in the last and transfer the contents to cake tin which is greased with butter
5. Preheat the oven to 180 degrees for 20minutes and bake the cake for 30 minutes.

Ingredients:

3-4 medium sized drumsticks cut into 1 inch pieces
1big size onion finely chopped
3 medium size tomatoes
3 green chillies slit vertically
1/2 cup chopped coriander leaves
Salt as per required
Chilli powder 1 tbsp
Tumeric 1/2 tsp
Ginger garlic paste 1 .5 tbsp

For the masala

1tbsp coriander seeds
3/4 cup groundnut
3/4 tbsp cumin seeds
1/2 tbsp khus khus seeds
1/2 cup sliced dry coconut pieces
1 tbsp cashew (optional but enhances the taste)
1 sprig of curry leaves
Dry roast all the above mentioned ingredients, add 1 tbsp of tamarind pulp and grind to smooth paste adding water as per required.

Preparation:
In a kadai, add 2- 3 tbsp of oil, once heated, saute the onions and green chillies for 5 min. To it add tumeric, ginger garlic paste and saute it for 3 min. Now add the tomatoes, drum stick pieces, chillipowder, salt and thoroughly mix all the ingredients, add 1 cup of water, close with the lid and let it cook for 10 min on medium flame. Now add the masala powder, adjust the salt, mix it all and cook for 5 more min and off the stove.

Ingredients:
Raw mango 1 big, cut into small pieces
Peanuts (soaked for atleast 1 hour) -1/2 cup
Fresh grated coconut - 1 tablespoon
Green chillies 10-12
Salt as per taste
For tempering :
1tsp chana dal
1tsp urad dal
1/2 tsp hinge
1/2 tsp cumin and mustard each
1 twig of curry leaves
2 dry chillies

Method:
Grind the above mentioned ingredients in a mixer grinder into a fine paste. Then add the tempering to it. Adjust the salt as per taste. Its a simple authentic andhra recipe, simple to make n super yummy in taste.

Recipe:
1cup maida/all purpose flour
1/2 cup powdered sugar
1/2 cup oil (unflavoured oil)
1 tsp vanilla essence(or any essence of ur choice)
Jam (here I used mixed fruit jam)

Mix all the ingredients except the jam and prepare a soft dough(adjust with water if needed any for soft consistency). Let it rest for 5minutes. In the meanwhile line the tray with baking paper or dust it with oil and flour and keep it ready. Here I am not using the oven instead I have used a thick bottomed vessel with a lid as I mentioned for many of my recipes. Place a even spread of salt in the bottom of the vessel (we can reuse this salt for atleast 10-12 times) and steel rack over it, close the lid and preheat it for 10minutes on a low to medium flame. If we are using a cooker we should take off the gasket ring and whistle from the lid. Roll the dough into equal and medium sized balls, once done press each ball into a cookie. Once all the cookies are made, line them on the butter paper, gently press the centre of cookie with the thumb and form a crater. Fill all these craters with jam and cook/bake them for 15minutes on a medium flame. Cool the cookies completely and once cooled, store them in a airtight container. They stay fresh for 10 days.

Recipe:

Cleaned nethilli fish 500gm
Tamarind pulp 4 to 5 tbs(thick pulp)
Tomatoes medium sized 2/3, chopped finely
Green chillies 2, cut into vertical slits
Coarsely ground 6 garlic pods( it adds flavour to the curry)
Ginger garlic paste 1 tbs
Coriander half bunch, chopped finely
Curry leaves 10
Methi /fenugreek seeds 1/2 tsp
Cumin seeds 1 tsp
Oil 3 tbs
Salt as required
Chilli powder 2 tbs
Tumeric 1 tsp
Coriander powder 1 tbs

Heat oil in the frying pan, to it add fenugreek seeds, cumin seeds, curry leaves, garlic, onions and green chilles, saute them for 3minutes. Now add ginger garlic paste, tumeric, salt, chilli powder, coriander powder and tomatoes, saute them for 5 to 6 minutes. Once the tomatoes are nicely cooked, add the tamarind pulp, half a cup of water, mix well, close the lid and let it cook for 3 minutes on a medium flame. After that adjust the salt and chilli powder, then add the fish(do not close the lid), cook it on medium flame for 5 to 7 minutes and lastly garnish it with the chopped coriander. Please do remember to stir the curry with spatula very gently after adding the fish as that will break the fish.
This serves good with rice and also roti/chapati.
